Sardines are (without question) very good for us all; they are also among the most sustainable \u00a0seafood species; they require a minimum of preparation and a fairly modest amount of cooking time; [The\u00a0<a href=\"http:\/\/shadowcook.com\/2010\/01\/30\/rose-gray-and-ruth-rogerss-roasted-sardines\/\">recipe<\/a>, found in\u00a0Rose Gray and Ruth Rogers\u2019 \u2018<a href=\"http:\/\/www.strandbooks.com\/italian-3\/italian-easy-recipes-from-the-river-cafe\">Italian Easy: Recipes from the London River Cafe<\/a>\u2018, is very simple.]; and last, but not the least considerations, they are\u00a0very beautiful on the table and are absolutely delicious.<\/p>\n<p>Grilled zucchini, especially when prepared as plainly as this, are\u00a0a perfect accompaniment to such virtue.<\/p>\n<ul>\n<li>six very fresh whole Maine sardines, cleaned by the staff at The Lobster Place, seasoned, placed inside an oiled ceramic dish exactly the size for accommodating them in one layer,\u00a0sprinkled with organic lemon zest, a combination of both Gaeta and black oil-cured olives from Buon Italia, pitted, and a handful of Costa Rica grape tomatoes from Manhattan Fruit Exchange (I had forgotten\u00a0to bring home local tomatoes\u00a0from the Greenmarket the day before) which were first pricked then\u00a0baked beforehand for 15 minutes at 400\u00ba, the assembled dish drizzled with more olive oil, baked for 10 minutes in a 400\u00ba oven, served with a slight drizzle of olive oil and organic lemon segments<\/li>\n<li>very small zucchini from Berried Treasures Farm, sliced in half lengthwise, tossed with olive oil, minced garlic from John D, Madura Farm, salt, and pepper, then pan grilled and finished with chopped\u00a0peppermint from Phillips Farm<\/li>\n<li>the wine was an Italian (Sicily) white,\u00a0<a href=\"http:\/\/www.manoavino.com\/2012\/11\/insolia-the-great-white-wine-grape-of-sicily.html\">Corvo Insolia 2013<\/a>\u00a0from\u00a0<a href=\"http:\/\/www.yelp.com\/biz\/philippe-wine-and-liquor-new-york\">Philippe Wine<\/a>\u00a0in Chelsea, which is located on our corner<\/li>\n<li>the music was\u00a0<a href=\"http:\/\/www.gramophone.co.uk\/node\/117505\/media-detail\">Josep Soler&#8217;s Violin Sonata No, 2 and Alban Berg&#8217;s Piano Sonata<\/a>, which is an amazing album<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>We feel particularly virtuous about our dinner choice tonight.
