{"id":5512,"date":"2015-09-30T01:05:33","date_gmt":"2015-09-30T01:05:33","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=5512"},"modified":"2015-09-30T01:05:33","modified_gmt":"2015-09-30T01:05:33","slug":"shishito-lemon-cod-parsley-tomato-minutina","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=5512","title":{"rendered":"shishito, lemon; cod, parsley, tomato; minutina"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/09\/shishito_oil_lemon_salts.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5515\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/09\/shishito_oil_lemon_salts.jpg\" alt=\"shishito_oil_lemon_salts\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/09\/cod_en_persillade_tomato_minutina.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5516\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/09\/cod_en_persillade_tomato_minutina.jpg\" alt=\"cod_en_persillade_tomato_minutina\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>In\u00a0preparing of each of the elements of this meal I departed a bit from my usual\u00a0treatment, but not always intentionally.<\/p>\n<ul>\n<li>I prepared the peppers, small shishito from Lani&#8217;s Farm\u00a0just a little more elaborately\u00a0than usual, but there&#8217;s not a lot to be gained\u00a0in repeating the same formula over and over again, at least when it comes to cookery; I added\u00a0thin\u00a0slices of\u00a0lemon towards\u00a0the end of the peppers&#8217; time blistering in the pan, and served them on the table with a choice of three salts (two of them flavored) plain, classic Maldon, smoked alderwood from <a href=\"http:\/\/www.tfsnyc.com\/\">The Filling Station<\/a>, and &#8216;<a href=\"http:\/\/www.selmagique.com\/\">Sel Magique<\/a>&#8216; (I had forgotten that I also had my own lemon-caper salt sitting in the cupboard as well)<\/li>\n<li>the wine was a California white, <a href=\"http:\/\/www.chelseawinevault.com\/shop-by\/this-month-s-top-10\/hanging-vine-chardonnay-california-2014\">Hanging Vine Chardonnay Parcel 4 Lodi 2014<\/a><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>The main course would already have been a variation on a classic Thomas Keller recipe, but I altered it even further, in this case inadvertently.\u00a0This is how my own version of the recipe for the cod was supposed to go:<\/p>\n<blockquote><p>two cod fillets from P.E. &amp; D.D. Seafood, brought to room temperature and seasoned with salt on both sides, the top of each piece brushed with a little real dijon mustard mixed with a very little water, that side then dipped in a mixture of homemade breadcrumbs and finely-chopped parsley from Keith&#8217;s Farm, browned briefly, breadcrumb side down, in a heavy enameled cast iron pan with olive oil, transferred to a 325\u00ba oven and cooked until the fish begins to flake, near the end of the cooking adding tiny &#8216;Mexico Midget&#8217; vine tomatoes from Berried Treasures, arranging them on the cod after it was filleted<\/p><\/blockquote>\n<p>But, probably because I\u00a0was tired, and a little distracted, I forgot to bread the two fillets,\u00a0so, as soon\u00a0as I had had put them into the pan, I removed them and dipped them in the breadcrumb mixture I had placed\u00a0in a bowl on the counter, and\u00a0then, in returning them to the pan, I neglected to return them\u00a0with the breaded sides down; finally,\u00a0I almost forgot to toss the tomatoes into the pan before the cod was finished cooking.<\/p>\n<p>I was surprised that\u00a0everything\u00a0turned out okay, and in the end the fish didn&#8217;t even look messy. More importantly, it was\u00a0delicious, probably meaning it was a\u00a0good recipe &#8211; and surely a keeper.<\/p>\n<ul>\n<li>As for the minutina, from Norwich Meadows Farm, this was the first time I had served\u00a0it\u00a0totally raw, as a salad, which is the way I think virtually everyone does serve it.\u00a0I&#8217;ve decided it will probably be the last time: \u00a0Although it may be tricky to get\u00a0this delicious green to the perfect\u00a0<em>wilt<\/em>, without seeing it virtually disappear in the pan, I think it&#8217;s worth the effort, for the contribution it makes both to taming the roughage\u00a0and improving the\u00a0flavor<\/li>\n<li>the wine with the fish was an Italian (Umbria) white, Orvieto<\/li>\n<li>the music was several of <a href=\"http:\/\/elysiumensemble.com\/notes\/haydn-divertimenti.html\">Haydn&#8217;s divertimenti<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>In\u00a0preparing of each of the elements of this meal I departed a bit from my usual\u00a0treatment, but not always intentionally.
