I had a number of ingredients at home which could grace an\u00a0interesting form of noodle, but not\u00a0really anything\u00a0that would stand on its own.<\/p>\n<p>I was delighted to find a\u00a0very special filled pasta inside the glass display case when I arrived, the\u00a0Emilia-Romagna\u00a0<em>tortelli piacentini, <\/em>an intricately-folded, slightly-braided egg pasta\u00a0filled with<em>\u00a0<\/em>ricotta, mascarpone, chard, <em>grana padano<\/em>, salt, and pepper. \u00a0I asked\u00a0<a href=\"http:\/\/www.pastaioluca.com\/\">Luca Donofrio<\/a>, Eataly&#8217;s\u00a0<em>pastaio<\/em>, who was working there inside the assembly area, how it should be sauced, and he said it would go well with the region&#8217;s classic <em>rag\u00fa<\/em>. \u00a0When I demurred at his\u00a0suggestion (not having\u00a0the time to cook the sauce, but also, as usual, reluctant to disguise the taste of a good filled pasta), he added that\u00a0it\u00a0would also welcome a simple sauce of butter, with perhaps, as I suggested in reply, the addition of some\u00a0special herb. \u00a0That&#8217;s how I approached this very special artisanal creation when I got home, adding, in the end, some shaved parmesan.<\/p>\n<p>As the pasta course was to be pretty small in size, I included\u00a0an antipasto, a classic\u00a0<em>insalata caprese<\/em>, and an improvised light green salad on the side.<\/p>\n<ul>\n<li>one ripe heirloom tomato from Lani&#8217;s Farm, sliced and allowed to sit for almost an hour with some Maldon sea salt sprinkled on top, then\u00a0layered with some very fresh &#8216;mozzarella classica&#8217; from Eatlay, a number of leaves of\u00a0<a href=\"http:\/\/gothamgreens.com\/our-produce\/basil\">Gotham Greens Brooklyn rooftop basil<\/a>\u00a0from\u00a0Whole Foods, the tomato juices returned to the slices, along with\u00a0an excellent olive oil, then served with slices of Seven Grain Bread from Eataly<\/li>\n<li>twelve ounces of fresh\u00a0<em>tortelli piacentini <\/em>from Eataly, sauced with a toss of melted unsalted butter, salt, and pepper, served with\u00a0freshly-shaved parmesan cheese on top, and scattered with the magic fresh fennel seeds I still had in reserve<\/li>\n<li>a salad of arugula from John D Madura Farm, tossed with slices of a small red onion from John D. Madura Farm, good olive oil, a touch of white balsamic vinegar, salt, pepper, and more fresh fennel seeds<\/li>\n<li>the wine was an Italian (Sardinia) white,\u00a0<a href=\"http:\/\/www.sellaemosca.it\/en\/legal.php?r=\/en\/vini_radici_sarde.php?id_sub=17&amp;id_art=382\">La Cala Vermentino di Sardegna 2013<\/a><\/li>\n<li>the music was streamed on Q2, and was\u00a0a part of the station&#8217;s 24-hour <a href=\"http:\/\/www.wqxr.org\/#!\/story\/her-music-crusading-composers-present-past\/\">&#8216;Her Music&#8217; marathon of \u00a0women composers<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I went down the street to Eataly this afternoon to fetch a good fresh pasta. \u00a0We had planned to\u00a0entertain some friends earlier in the evening, so I knew in advance\u00a0that there wouldn&#8217;t be much time to put together even a modestly ambitious meal.
