{"id":5272,"date":"2015-09-09T16:21:58","date_gmt":"2015-09-09T16:21:58","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=5272"},"modified":"2015-09-09T16:21:58","modified_gmt":"2015-09-09T16:21:58","slug":"crab-cake-tomato-greens-peppers-leeks-quebec","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=5272","title":{"rendered":"crab cake, tomato, greens; peppers, leeks; + Quebec"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/09\/crab_cakes_tomatoes_green_peppers.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5273\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/09\/crab_cakes_tomatoes_green_peppers.jpg\" alt=\"crab_cakes_tomatoes_green_peppers\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>Fast food (the crab cakes; the rest was slow).<\/p>\n<p>This may have been my favorite\u00a0treatment to date for\u00a0my favorite Greenmarket crab cakes. \u00a0It involved placing them on a bed of very ripe heirloom tomatoes and some Thai basil, and adding\u00a0a &#8216;topping&#8217; of a peppery melange of baby greens. \u00a0I decided on the green side entirely\u00a0because the only suitable vegetables I had in the crisper were\u00a0green bell peppers\u00a0(the last of the\u00a0bounty a friend recently shared with us from her upstate garden),\u00a0and some very neat\u00a0small leeks I had picked up from the Greenmarket the day before preparing this meal.<\/p>\n<ol>\n<li>crab cakes from P.E. &amp; D.D. Seafood, saut\u00e9ed in a little olive oil for about 4 minutes on each side, arranged on a\u00a0bed of roughly-chopped heirloom tomatoes (a friend&#8217;s\u00a0dark red, from her garden in Garrison, New York, and one Berried Treasures\u00a0orange), mixed with Thai basil (leaves and blossoms), salt, and pepper, each serving topped with a small amount of &#8216;Living Japanese Peppergrass&#8217; (pak choi\/red mustard\/green mizuna\/leaf broccoli) from <a href=\"http:\/\/www.radfarm.co\/\">Radicle Farm<\/a>, then drizzled with a bit of\u00a0good olive oil<\/li>\n<li>leeks from Ryder Farm, split and pan-grilled, combined with strips of green bell peppers from a friend&#8217;s garden in Garrison, saut\u00e9ed, celery from\u00a0Whole Foods, also saut\u00e9ed, some briefly-saut\u00e9ed\u00a0leek green stems, and garlic chive flowers<\/li>\n<li>a simple cheese course\u00a0with\u00a0Consider Bardwell&#8217;s goat milk &#8216;Danby&#8217; (made\u00a0with\u00a0a surprise\u00a0end-of-season batch), which produced\u00a0a great taste and a very long \u00a0<em>finish<\/em>, accompanied by thin toasts made from\u00a0slices\u00a0of one of Eataly&#8217;s &#8216;Integrale&#8217;\u00a0loaves<\/li>\n<li>the wine was a remarkable sturdy Quebec ros\u00e9, Le Charlevoyou Ros\u00e9 2014, <em>vinifi\u00e9 chez <a href=\"http:\/\/www.lapresse.ca\/vins\/actualites\/201405\/01\/01-4762652-le-migneron-de-charlevoix-aura-son-vin.php\">Maurice Dufour<\/a><\/em>; I know it&#8217;s from a very limited production (we bought it <em>\u00e0 la maison<\/em>, just\u00a0outside\u00a0Baie-Saint-Paul), and it&#8217;s not available in the U.S., but, if it were possible, I would buy a case of this wine today<\/li>\n<li>the music was Mozart&#8217;s &#8216;Don Giovanni&#8217;,\u00a0<a href=\"http:\/\/www.allmusic.com\/album\/wolfgang-amadeus-mozart-don-giovanni-mw0001532279\">conducted by\u00a0Carlo Maria Giulini, with\u00a0Eberhardt W\u00e4chter, Elisabeth Schwarzkop, and Cesare Valletti,\u00a0et al.<\/a><\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Fast food (the crab cakes; the rest was slow).
