There were three &#8216;sides&#8217;, rather than the usual one or two, since a friend returning from a weekend in the country had surprised us late in the afternoon with a gift of some of\u00a0her\u00a0garden&#8217;s bounty.<\/p>\n<p>This entire\u00a0dinner, in spite of the fact that it included three dressed vegetables, took only one hour to assemble!<\/p>\n<ul>\n<li>two thick loin lamb chops from 3-Corner Field Farm (one for each serving), thoroughly dried, cooked on a very hot grill pan for about 4\u00a0minutes on each side, seasoned just after having\u00a0been seared, then removed from the pan and each topped\u00a0with about 8\u00a0slightly-crushed\u00a0ramp fruit from Berried Treasures, the \u2018buds\u2019 having been\u00a0heated earlier\u00a0in\u00a0a bit of olive oil, finally the chops finished with a squeeze of lemon and a drizzle of olive oil<\/li>\n<li>snow peas from Norwich Meadows Farm, parboiled, drained, and dried, then\u00a0re-heated in olive oil, tossed with spearmint from Lani&#8217;s Farm, seasoned\u00a0with salt and pepper<\/li>\n<li>small, very tender, bicolor corn from Sycamore Farm, steamed\u00a0and the\u00a0kernels cut from the cob and reheated along with some warmed\u00a0chopped jalape\u00f1o pepper from Garrison, New York, the gift of a\u00a0friend, tossed with chopped lovage from Keith&#8217;s Farm<\/li>\n<li>flat-leaf kale from a friend (and gentlefolk farmer), torn form the stems and cut\u00a0in a broad Chiffonade, then braised in a heavy pot in which slightly-crushed garlic\u00a0from Phillips Farm had\u00a0previously been\u00a0heated in\u00a0some olive oil, finished with salt, pepper, and a drizzle of more olive oil<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>there was a cheese course: \u00a0slices of pepper-covered 3-Corner Field Farm Brebis, and toasts of\u00a0whole wheat bread (or\u00a0\u2018Integrale\u2019) from Eataly<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine throughout was a California red, <a href=\"https:\/\/us.nakedwines.com\/wines\/matt-parish-cabernet-sauvignon-napa-valley-2013.htm\">Matt Parish Cabernet Sauvignon Napa Valley 2013<\/a><\/li>\n<li>the music was <a href=\"https:\/\/www.youtube.com\/watch?v=5WsELdrzHSw\">Lully&#8217;s\u00a0&#8216;<em>Bell\u00e9rophon<\/em>&#8216;<\/a>, Christophe Rouset conducting\u00a0<em>Les Talens Lyriques &amp; Choeur de Namur<\/em><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This meal was clearly dominated by vegetables, and, as is sometimes the case in our kitchen, the meat was more or less\u00a0reduced to the role of a foil for their virtues.
