Rattlesnake beans, lovage; tomato"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/08\/Rattlesnake_Beans_Franca.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4992\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/08\/Rattlesnake_Beans_Franca.jpg\" alt=\"Rattlesnake_Beans_Franca\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>the beans<\/p>\n<p>&nbsp;<\/p>\n<p>Franca steered me toward these outsize, slightly homely beans shortly after\u00a0I had stopped by her stall in the Greenmarket on Wednesday. \u00a0Her knowing look,\u00a0her nod, and my follow through to her enjoiner, &#8220;taste one&#8221;, were all I needed to scoop up enough of these <a href=\"http:\/\/yougrowgirl.com\/food-worth-growing-rattlesnake-pole-bean\/\">Rattlesnake beans<\/a> for\u00a0dinner. \u00a0They were terrific even raw (always an indication of a good bean), and they more than lived up to that promise after a little parboil and the addition of lemon and one of my favorite herbs; \u00a0they had so much flavor however that\u00a0neither would actually have been\u00a0missed.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/08\/tuna_rattlesnake_beans.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4978\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/08\/tuna_rattlesnake_beans.jpg\" alt=\"tuna_rattlesnake_beans\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>The tuna was unusually <em>high<\/em>\u00a0at the fish monger&#8217;s on that same day;\u00a0when I cut a\u00a0very thick 11-ounce steak into two pieces, they each ended up looking more like ship&#8217;s prows than representatives of the\u00a0undersea aristocracy that they were.<\/p>\n<ul>\n<li>two five-and-a-half-ounce sections of tuna loin\u00a0from Blue Moon Fish\u00a0Company, rubbed on both top and bottom\u00a0with a mixture of fennel seed and dried peperoncini, ground together, plus salt and pepper, then pan-grilled for a minute or so on each side, finished with a good squeeze of lemon and a drizzle of olive oil<\/li>\n<li>Rattlesnake beans from Berried Treasures, strings removed and the beans &#8216;snapped&#8217;, parboiled for a few minutes, then dried inside the same pan while shaking it over a brisk flame, and later reheated with oil, tossed in a bowl with lemon zest and a little lemon juice,\u00a0seasoned with salt and pepper, and, finally, chopped lovage, also from Berried Treasures, cast over the top of each portion<\/li>\n<li>one small heirloom tomato from Norwich Meadows Farm, sliced into four horizontal layers,\u00a0briefly placed in the grill pan next to the tuna, then removed, distributed\u00a0onto two plates, seasoned, drizzled with a tiny bit of balsamic vinegar and some olive oil<\/li>\n<li>the wine was a California ros\u00e9, <a href=\"https:\/\/us.nakedwines.com\/wines\/david-akiyoshi-sangiovese-rose-lodi-2014.htm\">David Akiyoshi Sangiovese Ros\u00e9 Lodi California 2014<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.naxos.com\/catalogue\/item.asp?item_code=8.559322\">Huang Ruo Chamber Concertos, performed by ICE<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>the beans &nbsp;
