{"id":4910,"date":"2015-08-10T05:10:16","date_gmt":"2015-08-10T05:10:16","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=4910"},"modified":"2015-08-10T05:10:16","modified_gmt":"2015-08-10T05:10:16","slug":"crab-cake-tomato-salsa-agretti-grilled-young-onion","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=4910","title":{"rendered":"crab cake, tomato salsa; agretti; grilled young onion"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/08\/crab_cake_ramp_buds_tomato_agretti_onions.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4912\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/08\/crab_cake_ramp_buds_tomato_agretti_onions.jpg\" alt=\"crab_cake_ramp_buds_tomato_agretti_onions\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>I won&#8217;t make extravagant claims about its\u00a0visual aesthetic, but I will say that this was an incredibly\u00a0delicious meal, and that was something of a surprise, since while I was preparing it I thought I was merely emptying the ice box and the cupboards prior to our leaving\u00a0the city for five days.<\/p>\n<p>I&#8217;ve <a href=\"http:\/\/food.hoggardwagner.org\/2015\/07\/19\/crab-cakes-fresh-tomato-sauce-scapes-baby-greens\/\">already written<\/a> about both the quality and the elegant utility of these superb crab cakes.<\/p>\n<p>I also always think of these small, lightly-breaded savory patties as a perfect excuse for serving two or three interesting vegetables, and at least as many fresh herbs,\u00a0especially since they require absolutely no preparation themselves.<\/p>\n<ul>\n<li>crab cakes from PE &amp; DD Seafood (ingredients: crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, parsley), heated in a heavy iron pan, 3\u00a0to 4\u00a0minutes to each side, sprinkled with ramp fruit\u00a0(yup,\u00a0<a href=\"http:\/\/www.wildmanstevebrill.com\/Plants.Folder\/Ramp.html\">ramp fruit<\/a>, or maybe &#8216;seed pods&#8217;, or &#8216;bud heads&#8217;) from Berried Treasures which had been saut\u00e9ed in the small cast iron pan along\u00a0with the crab, served on a bed\u00a0of a fresh tomato sauce composed of a single large\u00a0golden heirloom tomato from Stokes Farm,\u00a0chopped and combined with salt, pepper, and basil leaves torn off of a\u00a0plant\u00a0(Full\u00a0Bloom\u00a0Market\u00a0Garden,\u00a0Whately,\u00a0Ma.) brought home from Whole\u00a0Foods<\/li>\n<li>one bunch of\u00a0<a href=\"http:\/\/www.jamieoliver.com\/news-and-features\/features\/agretti\/#izbskMpxXYk19t8y.97\">agretti<\/a>\u00a0(which grows along the sea, and is a great accompaniment for seafood) from Tamarack Hollow Farm, washed, trimmed, the larger stems removed (although, as it happened, not\u00a0sufficiently, stems, as Barry has observed, being the bones of good vegetables) then boiled for about 15 minutes, drained, set aside, later heated in olive oil and arranged on plates, where it was squeezed with lemon juice and given a drizzle of olive oil<\/li>\n<li>\n<div>early red onions from Tamarack Hollow Farm, washed, halved lengthwise, rolled in seasoned olive oil, pan grilled, then dusted with torn tarragon leaves from Stokes Farm<\/div>\n<\/li>\n<li>\n<div>the wine was an Oregon white, <a href=\"http:\/\/www.montinore.com\/?method=products.productDrilldown&amp;productID=d678f900-0bf6-073e-202e-b7e6b229b994&amp;originalMarketingURL=product\/2014-Pinot-Gris\">Montinore Estate Willamette Valley Pinot Gris 2014<\/a><\/div>\n<\/li>\n<li>the music was \u00a0streamed from Q2, and it included works by Donnacha Dennehy,\u00a0Magnus Lindberg, Peteris Vasks, and\u00a0Peter Schroeder<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I won&#8217;t make extravagant claims about its\u00a0visual aesthetic, but I will say that this was an incredibly\u00a0delicious meal, and that was something of a surprise, since while I was preparing it I thought I was merely emptying the ice box and the cupboards prior to our leaving\u00a0the city for five days.
