{"id":4853,"date":"2015-08-03T20:05:59","date_gmt":"2015-08-03T20:05:59","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=4853"},"modified":"2015-08-03T20:05:59","modified_gmt":"2015-08-03T20:05:59","slug":"wild-boar-sausage-fresh-black-beans-grilled-quash","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=4853","title":{"rendered":"wild boar sausage, fresh black beans; grilled quash"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/08\/wild_boar_sausage_beans_squash3.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4868\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/08\/wild_boar_sausage_beans_squash3.jpg\" alt=\"wild_boar_sausage_beans_squash3\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>Not vegan. \u00a0But very good, and the vegetables were much more than just supporting stars.<\/p>\n<p>&nbsp;<\/p>\n<p>I had gone to Eataly to pick up a loaf of bread, and some mint. \u00a0The night before that, Friday,\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2015\/08\/01\/swordfish-olive-tapenade-tomato-salsa-minutina\/\">we had enjoyed\u00a0fish<\/a>, and the Saturday night I found myself at Eataly there\u00a0would be a totally\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2015\/08\/02\/penne-rigate-grilled-eggplant-chiles-lemon-mint\/\">vegetarian pasta<\/a> on the table. \u00a0I knew I wouldn&#8217;t be able to pick up fresh seafood for Sunday&#8217;s dinner, so\u00a0I had been thinking of defrosting a\u00a0small amount\u00a0of meat, either a duck breast or two lamb chops, for the two of us.\u00a0\u00a0I hadn&#8217;t committed myself to either, and I suppose I had left myself open to being distracted by the bounty I knew awaited at\u00a0our almost embarrassingly-blue-ribbon local Italian food outlet.<\/p>\n<p>I bought some sausage.<\/p>\n<p>Barry had recently mentioned that locally-sourced sausage might be\u00a0an attractive alternative to our more usual\u00a0entr\u00e9es, so when I spotted the little sign inside the meat display case which read, &#8216;wild boar sausage&#8217;, which also\u00a0included\u00a0information on\u00a0its origin, it felt like it was a natural.<\/p>\n<p>My next assignment was to figure how to combine it with the very specific\u00a0supply\u00a0of vegetables I had available. \u00a0I was still improvising up to the moment I plated the sausage and the vegetables, but I think I did myself proud, and I was surprised that I was able to\u00a0come up with what seemed like a\u00a0fairly Italian meal in the end.<\/p>\n<ul>\n<li>four links (12 ounces) of <a href=\"http:\/\/www.brokenarrowranch.com\/FAQ.htm#wild\">wild<\/a> South Texas boar sausage from\u00a0Toro Ranch, of Broken Bow, Texas, found at Eataly, pan-grilled for about 20-25 minutes<\/li>\n<li>Black Turtle beans from Norwich Meadows Farm, washed, shelled, added to a pot\u00a0in which\u00a0sliced shallots from John C. Madura Farms and\u00a0sliced fresh garlic from Lucky Dog Organic had been saut\u00e9ed in olive oil for about 3 minutes, water then added to cover, the mix cooked for about 15 minutes, and a generous handful of sage (whole leaves) from Norwich Meadows Farm added to the beans in the now-reduced liquid before the legumes were put on plates, the sausage placed on top and painted with a modified mustard<\/li>\n<li>the sauce for the rich boar links\u00a0was\u00a0thrown together at the\u00a0last-minute, a mix of roughly equal parts,\u00a0<a href=\"http:\/\/www.fallot.com\/\">Edmond Fallot Dijon Mustard<\/a>, <a href=\"http:\/\/www.holyschmitts.com\/\">Holly Schmitt&#8217;s Homemade Horseradish<\/a>, and <a href=\"http:\/\/www.berkshireberries.com\/jelly.html\">Berkshire Berries&#8217; Horseradish Jelly<\/a> [the last two\u00a0found in the <a href=\"http:\/\/www.grownyc.org\/greenmarket\/manhattan-union-square-sa\">Union Square Greenmarket<\/a>, both\u00a0within recent weeks]<\/li>\n<li>baby yellow squash from Berried Treasures, brushed with olive oil,\u00a0seasoned with salt an pepper, grilled on a large cast iron pan, finished with torn leaves of mint from\u00a0Eataly, and\u00a0a drizzle of olive oil<\/li>\n<li>the wine was a California red,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/f-stephen-millier-black-label-reserve-petite-sirah-calaveras-county-2013.htm?region=NY\">F.
