{"id":4812,"date":"2015-08-01T18:48:42","date_gmt":"2015-08-01T18:48:42","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=4812"},"modified":"2015-08-01T18:48:42","modified_gmt":"2015-08-01T18:48:42","slug":"swordfish-olive-tapenade-tomato-salsa-minutina","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=4812","title":{"rendered":"swordfish, olive tapenade, tomato salsa; minutina"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/08\/swordfish-tapenade_tomato_minutina.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4814\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/08\/swordfish-tapenade_tomato_minutina.jpg\" alt=\"swordfish-tapenade_tomato_minutina\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>I decided to splurge, but I\u00a0felt it would be okay to do so. \u00a0 The average cost at the Greenmarket of each portion of\u00a0fish\u00a0included in our\u00a0last two\u00a0meals had worked out to less than $2.50, so now\u00a0I would be\u00a0comfortable about spending almost\u00a0$10 per portion\u00a0for\u00a0a special treat.<\/p>\n<p>And besides, Barry was returning from a <a href=\"https:\/\/instagram.com\/explore\/tags\/artsyoffsite\/\">campout<\/a> with his coworkers in the Catskills wilderness that afternoon.<\/p>\n<p>After putting two swordfish steaks (thick, and a little larger than I would normally have picked) into my insulated shoulder bag, along with some ice, the only question was which of the several attractive\u00a0vegetables\u00a0I also bought\u00a0would accompany them. \u00a0My considerations were basically, what would be\u00a0the most compatible, the most colorful, and, to be practical, the least likely to survive well for another day or two. \u00a0 When\u00a0I remembered that I had some black olive tapenade on hand, remaining\u00a0from <a href=\"http:\/\/food.hoggardwagner.org\/2015\/07\/28\/sea-robin-fillets-with-tapenade-okra-heirloom-salad\/\">an earlier meal<\/a>, I\u00a0decided to introduce\u00a0it\u00a0to the pan-grilled fish, and also I also chose\u00a0to include\u00a0some of the\u00a0tomatoes which had been ripening on the north windowsill for a few days.<\/p>\n<p>Finally, I thought\u00a0that the minutina I had picked up that day, even if these lacy, toothed greens are actually less delicate than they appear, and might\u00a0have lasted a few more, would be an excellent foil for everything else.<\/p>\n<ul>\n<li>two thick swordfish steaks from Pura Vida, rinsed, dried, brushed with olive oil, seasoned with salt and pepper, pan-grilled for about 5 minutes per side, removed to two\u00a0plates, a bit of lemon squeezed over them, along with\u00a0a bit of oil, then finished with a <a href=\"http:\/\/everydayfrenchchef.com\/recipes\/starters\/tapenade\/\">tapenade<\/a>\u00a0composed of\u00a0black olives, anchovy,\u00a0capers,\u00a0garlic,\u00a0olive oil,\u00a0thyme, and\u00a0ground black pepper<\/li>\n<li>a primitive salsa of cut cherry tomatoes (fully-ripe\u00a0Maine \u2018cocktail\u2019 tomatoes from Whole Foods, and a smaller number of equally ripe tiny golden tomatoes from Norwich Meadows Farm), tossed with torn leaves of some extraordinarily\u00a0beautiful tarragon from Stokes Farm, a bit of oil, and a pinch of Malden salt, then left standing for a few minutes while the fish cooked<\/li>\n<li>minutina from Norwich Meadows Farm, washed, drained, then wilted slightly in medium-hot olive oil in which a little\u00a0sliced fresh garlic from Lucky Dog Organic had started\u00a0to brown<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>We enjoyed some half-wild strawberries from Berried Treasures (in the refrigerator since Wednesday, as I had forgotten then until I began preparing the entr\u00e9e, but still tasting fantastic), with a dollop [I love that word; use it as often as I dare] of\u00a0<a href=\"http:\/\/ciaobellagelato.com\/madagascarvanilla\/\">Madagascar\u00a0Vanilla\u00a0Ciao Bello<\/a> gelato, topped with a bit of strawberry &#8216;self sauce&#8217;.<\/p>\n<p>It was like a special birthday treat, but without the [short]cake.<\/p>\n<ul>\n<li>the wine with the entr\u00e9e was an Italian white,\u00a0<a href=\"http:\/\/www.sellaemosca.it\/en\/legal.php?r=\/en\/vini_radici_sarde.php?id_sub=17&amp;id_art=382\">La Cala Vermentino di Sardegna 2013<\/a><\/li>\n<li>the music throughout was <a href=\"https:\/\/www.youtube.com\/watch?v=149DrCPd0_o\">Schubert&#8217;s &#8216;Alfonso und Estrella&#8217;<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I decided to splurge, but I\u00a0felt it would be okay to do so. \u00a0 The average cost at the Greenmarket of each portion of\u00a0fish\u00a0included in our\u00a0last two\u00a0meals had worked out to less than $2.50, so now\u00a0I would be\u00a0comfortable about spending almost\u00a0$10 per portion\u00a0for\u00a0a special treat.
