{"id":4682,"date":"2015-07-19T19:33:58","date_gmt":"2015-07-19T19:33:58","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=4682"},"modified":"2015-07-19T19:33:58","modified_gmt":"2015-07-19T19:33:58","slug":"crab-cakes-fresh-tomato-sauce-scapes-baby-greens","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=4682","title":{"rendered":"crab cakes, fresh tomato sauce; scapes; baby greens"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/07\/crab_cake_tomato_scapes_greens.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4685\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/07\/crab_cake_tomato_scapes_greens.jpg\" alt=\"crab_cake_tomato_scapes_greens\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>I cannot say enough about these crab cakes as a concept! \u00a0 They&#8217;re not only delicious,\u00a0but also\u00a0incredibly simple to prepare, can be quickly put onto the table, and, possibly most importantly &#8211; at least for people like ourselves &#8211; <strong>extremely\u00a0useful\u00a0they are when the cook is unable to go outside foraging for a dinner entr\u00e9e<\/strong>.<\/p>\n<p>The last item in that list of virtues assumes that the package had been kept frozen in the freezer, but defrosted in time for a quick saut\u00e9. \u00a0I don&#8217;t know how long it takes a package of two crab cakes to defrost in the\u00a0refrigerator, but I usually manage to have the foresight to\u00a0move them there before going to bed the night before I expect to serve them.<\/p>\n<p>The crab cakes I use, pre-cooked and packaged in twos, are from the PE &amp; DD Seafood stand, which can be found in the Union Square Greenmarket on both Saturdays and Mondays,\u00a0and I usually pick up a package on my every visit.<\/p>\n<p>I neglected to mention one other virtue of this particular form of this particular order\u00a0of\u00a0<em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Decapoda\">decapoda<\/a><\/em>: \u00a0Crabs can be difficult, but this\u00a0represents\u00a0certainly the\u00a0most accessible way\u00a0&#8211; by far &#8211; to enjoy\u00a0one of the most supremely delicious kinds of seafood available.<\/p>\n<p>An interesting aspect of putting together a\u00a0dinner with\u00a0crab cakes is that, at least in my own experience, it\u00a0inspires improvisation in the sauce or condiment, and\u00a0welcomes creativity in the\u00a0treatment of the vegetables which will share the plate, including the assembly of\u00a0things which are not normally combined, or even featured as sides.<\/p>\n<ul>\n<li>crab cakes from PE &amp; DD Seafood (ingredients: crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, parsley), heated in a heavy iron pan, three or four minutes to each side, served on top of a fresh tomato sauce composed of the tomatoes set aside\u00a0after I had made &#8216;tomato water&#8217; for a <a href=\"http:\/\/food.hoggardwagner.org\/2015\/07\/18\/just-gathered-scallops-fava-tautog-lacinato-berries\/\">tautog fillet a few nights earlier<\/a><\/li>\n<li>mixed baby greens from Lani\u2019s Farm, dressed with good olive oil, lemon, salt, and pepper<\/li>\n<li>small, tender garlic scapes from Lucky Dog Organic, cut into approximately one-inch lengths, saut\u00e9ed, seasoned, sprinkled with a little bit of torn Full Bloom Market Garden basil from Whole Foods and spearmint from Phillips Farm<\/li>\n<li>the wine was an Argentinian white, <a href=\"http:\/\/gouguenheim.com.ar\/history?lang=en\">Guenguenheim Valle EscondidoTorront\u00e9s 2014<\/a><\/li>\n<li>the music was Bach&#8217;s Orchestral Suites<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I cannot say enough about these crab cakes as a concept! \u00a0 They&#8217;re not only delicious,\u00a0but also\u00a0incredibly simple to prepare, can be quickly put onto the table, and, possibly most importantly &#8211; at least for people like ourselves &#8211; extremely\u00a0useful\u00a0they are when the cook is unable to go outside foraging for a dinner entr\u00e9e.
