{"id":4610,"date":"2015-07-13T23:51:48","date_gmt":"2015-07-13T23:51:48","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=4610"},"modified":"2015-07-13T23:51:48","modified_gmt":"2015-07-13T23:51:48","slug":"speck-tunisian-cauliflower-frittata","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=4610","title":{"rendered":"Speck\/arugula; Tunisian cauliflower frittata; salad"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/07\/Tunisian_cauliflower_frittata.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4642\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/07\/Tunisian_cauliflower_frittata.jpg\" alt=\"Tunisian_cauliflower_frittata\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>I was putting this Tunisian cauliflower frittata\u00a0together on the same day I was reading the sad story of\u00a0foreign visitors&#8217; fleeing\u00a0Tunisia because of warnings of terrorism. \u00a0My choice of an entr\u00e9e had not been influenced by it, but the news added depth to\u00a0our appreciation\u00a0of\u00a0this dish &#8211; and of Tunisia.<\/p>\n<p>It&#8217;s a simple concoction to put together, can be done even a day ahead of time (and any leftovers taste great even the day after that), and can, and indeed should, be served at room temperature. \u00a0A perfect summer meal.<\/p>\n<p>We shared it with a friend who wanted to share some excellent ros\u00e9 wine with us. \u00a0Before we had made that arrangement I had bought some yellow cauliflower from one of my favorite\u00a0Greenmarket farmers, but it was not enough for this recipe, so I retrieved a 20-ounce head from Eataly and saved the smaller one for another meal.<\/p>\n<p>I set out plates of Speck as an appetizer, even though that element of the meal was hardly Tunisian.<\/p>\n<ul>\n<li>Speck from Eataly, on a plate with\u00a0arugula from John D. Maderna Farm which was dressed with oil and lemon, accompanied by slices of\u00a0whole wheat (\u2018Integrale\u2019) from Eataly<\/li>\n<\/ul>\n<p>The picture of the frittata resting on top of my\u00a0<a href=\"http:\/\/thevintagesite.com\/wp-content\/uploads\/2014\/11\/Magic-Chef-1931.jpg\">1931 Magic Chef<\/a> oven was taken just after it had been removed from the oven the day before we enjoyed it.<\/p>\n<ul>\n<li>the frittata included a small yellow onion\u00a0from Norwich Meadows Farm, fresh garlic from Lucky Dog Organic, eggs from\u00a0Millport Dairy, parsley from\u00a0Stokes Farm, caraway seeds,\u00a0Red Cow Parmesan cheese from Eatlay, and a terrific cayenne from <a href=\"http:\/\/www.spicesandtease.com\/\">Spices and Tease<\/a>\u00a0[<a href=\"http:\/\/cooking.nytimes.com\/recipes\/1014472-tunisian-style-baked-cauliflower-frittata\">the recipe<\/a> is\u00a0from Martha Rose Shulman in the New York Times]<\/li>\n<li>a salad of halved tomatoes (red cherry from from Norwich Meadows Farm, and golden\u00a0golden grape Florida tomatoes from Eataly) tossed with sliced small Persian cucumbers from Norwich Meadows Farm, dressed with olive oil, a red rioja wine vinegar, and torn spearmint leaves from Phillips Farm<\/li>\n<li>the central wine of the evening was a German ros\u00e9, <a href=\"https:\/\/chambersstwines.com\/Products\/34063\/koehler-ruprecht-2014-pfalz-kabinett-trocken-pinot-noir-rose\">Koehler Ruprecht 2014 Pinot Noir Ros\u00e9 Kabinett trocken<\/a> from the Pfalz<\/li>\n<li>the music was our conversation<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I was putting this Tunisian cauliflower frittata\u00a0together on the same day I was reading the sad story of\u00a0foreign visitors&#8217; fleeing\u00a0Tunisia because of warnings of terrorism. \u00a0My choice of an entr\u00e9e had not been influenced by it, but the news added depth to\u00a0our appreciation\u00a0of\u00a0this dish &#8211; and of Tunisia.
