I&#8217;ve done it many times, usually varying the finishing touches with various herbs, or alliium. \u00a0This time I had some winter savory, a good stand-in for the almost-classic rosemary.<\/p>\n<ul>\n<li>a small duck breast\u00a0(11 ounces)\u00a0from Pat LaFrieda at Eataly, the fatty side scored, covered\u00a0with salt, pepper and a bit of turbinato sugar infused over time with a vanilla bean, then\u00a0left standing for about half an hour before it was pan-fried, finished with Long Island lemon from Fantastic Gardens\u00a0in the Union Square Greenamarket, chopped winter savory\u00a0from Whole Foods,\u00a0and\u00a0a bit of olive oil<\/li>\n<li>collard greens from Rogowski Farm,\u00a0cut in a\u00a0rough chiffonade, braised in a heavy pot in which crushed garlic garlic from\u00a0S. &amp; S.O. Produce Farms\u00a0had been allowed to sweat with\u00a0a bit of\u00a0olive oil, finished with salt, pepper, and a drizzle of olive oil<\/li>\n<li>boiled\u00a0German Butterball potatoes from Mountain Sweet Berry Farm,\u00a0boiled in salted water, drained, steamed dry, rolled with a small amount of olive oil, freshly-ground black pepper, and pea sprouts from\u00a0from Lucky Dog Organic<\/li>\n<li>the wine was a French red, <a href=\"http:\/\/www.annedejoyeuse.fr\/vins.php?gamme=camas&amp;vin=cabernet&amp;langue=en\">Anne de Joyeuse Cabernet Sauvignon 2011<\/a><\/li>\n<li>the music was an extraordinary piece,\u00a0<a href=\"http:\/\/www.cdbaby.com\/cd\/stevenfeld2\">&#8216;Suikinkutsu&#8217;<\/a>\u00a0[water-zither-cave], by ethnomusicologist Steven Feld<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I think if I had to choose to cook and serve but one kind of red meat going forward, I might choose duck breast, and this is a wonderful (and very simple and easy) way to prepare it.
