{"id":3821,"date":"2015-03-17T18:38:15","date_gmt":"2015-03-17T18:38:15","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=3821"},"modified":"2015-03-17T18:38:15","modified_gmt":"2015-03-17T18:38:15","slug":"cod-fillet-sorrel-sauce-boiled-potatoes-baby-leeks","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=3821","title":{"rendered":"cod fillet, sorrel sauce; boiled potatoes, baby leeks"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/03\/cod_sorrel_sauce_boiled_potatoes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3823\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/03\/cod_sorrel_sauce_boiled_potatoes.jpg\" alt=\"cod_sorrel_sauce_boiled_potatoes\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p><strong>Note to self: \u00a0This meal turned out even better than I had expected, and our expectations had been pretty\u00a0high.<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>We love sorrel, and a search of this site for\u00a0the word\u00a0would confirm that.<\/p>\n<p>Yesterday, the first thing I saw\u00a0after deciding on a beautiful, specially-price fresh cod fillet at P.E. &amp; D.D. in the Greenmarket, was a basket of sorrel in\u00a0the returning-for-spring stall of Bodhitree Farms. \u00a0Our dinner was suddenly almost fully conceived.<\/p>\n<p>The\u00a0meal was a huge leap from that of the day before, in the kind of ingredients, the style, and\u00a0lusciousness. \u00a0And I even managed to hold back some of the sorrel (a little goes a long way in <a href=\"http:\/\/food.hoggardwagner.org\/2015\/01\/28\/pork-chop-with-lemon-sorrel-roots-collards\/\">some dishe<\/a>s).<\/p>\n<ul>\n<li>a one-pound cod fillet from P.E. &amp; D. D. Seafood, lightly-seasoned and cooked over medium-high heat, in butter and olive oil, until if flaked, divided into two pieces, plated, and covered with a sauce which began with\u00a0S.&amp;S.O. Produce Farms shallots sweated in butter, continued with a glass of white wine, to be\u00a0reduced completely, followed by a cup of very\u00a0tasty\u00a0fish stock (mine was\u00a0a compressed cube of Spanish fish bouillion from <a href=\"http:\/\/www.caldosdelnorte.com\/\">CalNort<\/a> which I had been keeping in the refrigerator door, and\u00a0can&#8217;t remember where it was purchased) which was reduced to a quarter\u00a0of its original volume, the heat then brought down to low, half a cup of heavy cream from the excellent <a href=\"http:\/\/www.tricklingspringscreamery.com\/\">Trickling Springs Creamery<\/a> poured\u00a0in, along with a handful of de-stemmed sorrel leaves from Bodhitree Farm, the sauce stirred until the leaves &#8216;melted&#8217; (there are probably an infinite number of sorrel sauce recipes, and I&#8217;ve used a number\u00a0of them; many are much simpler, but <a href=\"http:\/\/nude-food.blogspot.com\/2011\/06\/ode-to-sorrel.html\">this<\/a>\u00a0happens to be the one I followed here)<\/li>\n<li>baby Yukon Gold potatoes from Norwich Meadows Farm, boiled in salted water, drained and dried in the still-warm glass <a href=\"http:\/\/www.ebay.com\/itm\/VIntage-Pyrex-6-Piece-Blue-Tint-Flameware-Stovetop-Pans-Removeable-Handles-\/111577304599\">pot<\/a>, rolled in a little butter, and sprinkled with sliced baby leeks from Rogowski Farm<\/li>\n<li>the wine was a California white, <a href=\"http:\/\/us.nakedwines.com\/wines\/sin-fronteras-dos-mujeres-california-2013.htm\">Sin Fronteras dos Mujeres 2104<\/a> (we love everything about\u00a0<a href=\"http:\/\/us.nakedwines.com\/\">Naked Wines<\/a>!)<\/li>\n<li>the music was <a href=\"http:\/\/www.thebachguild.com\/?p=182\">Bach Cello Suites, played by Charles Curtis<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Note to self: \u00a0This meal turned out even better than I had expected, and our expectations had been pretty\u00a0high. &nbsp; We love sorrel, and a search of this site for\u00a0the word\u00a0would confirm that.
