{"id":3731,"date":"2015-03-07T07:52:46","date_gmt":"2015-03-07T07:52:46","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=3731"},"modified":"2015-03-07T07:52:46","modified_gmt":"2015-03-07T07:52:46","slug":"cumin-rubbed-scallops-a-bed-of-collards-pancetta","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=3731","title":{"rendered":"cumin-rubbed scallops; a bed of collards &#038; pancetta"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/03\/scallops_collards_pancetta.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3735\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/03\/scallops_collards_pancetta.jpg\" alt=\"scallops_collards_pancetta\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p><strong>Note to self: This is an unbelievably easy and extraordinarily delicious entr\u00e9e, employing two of my favorite things, so where has it been all these years?<\/strong><\/p>\n<p>This image of near perfection doesn&#8217;t look real even to me, and yet it&#8217;s a dish I put together myself a few \u00a0hours ago. \u00a0Among the\u00a0several other delights and rewards in preparing this amazing surf, turf, and colewart entr\u00e9e was the knowledge that I was\u00a0including a late fall vegetable in a meal being served\u00a0at the end of the first week of March. \u00a0Woot! \u00a0Mainly however it was the pleasure we had\u00a0in savoring both its taste and its textures.<\/p>\n<ul>\n<li>late this afternoon, while trying to scare up\u00a0something which would both include two Greenmarket prizes of the day, and which could also be assembled in only a few minutes after we had returned from a concert, I found on line the general outlines of the dish I ended up with; \u00a0<a href=\"http:\/\/www.foodsamba.com\/2010\/09\/seared-scallops-with-collard-green.html\">this\u00a0is Emma Ribiero&#8217;s terrific recipe<\/a>,\u00a0and these are the sources of the ingredients I used: \u00a0sea scallops from Pura Vida; collard greens from Rogowski Farm, cut as thin &#8216;noodles&#8217; (I came\u00a0home today with Ron&#8217;s last few leaves); Colameco\u2019s uncured diced Pancetta\u00a0from Whole Foods; and one minced Christopher Ranch garlic clove from Eataly<\/li>\n<li>the wine was a French white, <a href=\"http:\/\/www.lahautefevrie.com\/\">Muscadet S\u00e8vre et Maine, Domaine La Haute Fevrie 2013<\/a><\/li>\n<li>the music was Rodion Shchedrin&#8217;s 1999 Piano Concerto No. 5<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Note to self: This is an unbelievably easy and extraordinarily delicious entr\u00e9e, employing two of my favorite things, so where has it been all these years?
