{"id":3594,"date":"2015-02-23T02:04:41","date_gmt":"2015-02-23T02:04:41","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=3594"},"modified":"2015-02-23T02:04:41","modified_gmt":"2015-02-23T02:04:41","slug":"sunday-lunch-eggcapocollotomatoparmesan","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=3594","title":{"rendered":"sunday lunch: egg\/capocollo\/tomato\/parmesan"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/02\/eggs_on_capocollo_tomato.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3600\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/02\/eggs_on_capocollo_tomato.jpg\" alt=\"eggs_on_capocollo_tomato\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>It was Sunday morning, or rather Sunday <em>afternoon<\/em>.\u00a0 Something eggs seemed to be in order, but perhaps nothing really special, considering the hour.\u00a0 It had to be tasty, but also practical, that is, I was thinking it would be good if I could include mostly ingredients ready to leave the larder.<\/p>\n<p>It was also going to be easy, if not quite instant.<\/p>\n<p>I started by buttering a large-ish enameled iron pan and placing in it a layer of a few ounces of thinly sliced Colameco\u2019s capocolla from Whole Foods which I had almost forgotten was still in the refrigerator. I broke 6 eggs from Millport Dairy on top of the salume, fried them until the whites had not quite become solid, seasoned them and poured over them a bit of tomato sauce.\u00a0 The sauce was composed as they cooked, and included sliced spring garlic, heated in olive oil, before tomato juices from the canned tomatoes used the night before were added, the sauce then reduced until slightly thickened.\u00a0 There were various chopped herbs involved somewhere along the way, leftover from two meals of the day before.\u00a0 I finished the eggs with a sprinkling of grated Parmesan cheese and served them with toast made from both a sourdough\u00a0b\u00e2tard from She Wolf Bakery and a Rustic Classic loaf from Eataly.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>It was Sunday morning, or rather Sunday afternoon.\u00a0 Something eggs seemed to be in order, but perhaps nothing really special, considering the hour.\u00a0 It had to be tasty, but also practical, that is, I was thinking it would be good if I could include mostly ingredients ready to leave the larder.
