{"id":3497,"date":"2015-02-15T07:01:12","date_gmt":"2015-02-15T07:01:12","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=3497"},"modified":"2015-02-15T07:01:12","modified_gmt":"2015-02-15T07:01:12","slug":"lasagna-with-speck-anjou-pears-cayenne-pepper","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=3497","title":{"rendered":"lasagna with speck, anjou pears, cayenne pepper"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/02\/lasagna_with_speck_pears.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3498\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/02\/lasagna_with_speck_pears.jpg\" alt=\"lasagna_with_speck_pears\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>Valentine&#8217;s day.\u00a0 I was thinking that the occasion naturally suggested a pink sparkling wine, so I immediately moved on to the most obvious pairing, a luscious lasagne which features speck and pears.\u00a0 Actually, it was the other way around.\u00a0 I first came across <a href=\"http:\/\/italianfood.about.com\/od\/bakedpasta\/r\/blr1732.htm\">this wonderful recipe<\/a> years ago, on the Italian Food sight hosted at the time by <a href=\"http:\/\/dobianchi.com\/2013\/10\/21\/kyle-phillips-wine-blogger\/\">Kyle Phillips<\/a>.\u00a0 Tragically, our guide died several years ago, and I&#8217;m certain that we are not the only ones who feel the loss, almost daily.\u00a0 Many of my favorite recipes and boldest forays into Italian\u00a0 cuisine I owe to Kyle.<\/p>\n<p>The somewhat lasagna recipe which incorporates speck and pears has become an annual tradition, the centerpiece for every Valentine&#8217;s day, mostly because Kyle had suggested it long ago.\u00a0 The pink sparkling wine is usually also a part of the tradition.\u00a0 The Nigerian cayenne only arrived in the mix this year.<\/p>\n<p>I can highly recommend the dish, on a number of counts.\u00a0 Yes, it&#8217;s absolutely delicious, and it&#8217;s feel light (perhaps deceptively so), but the clincher for a special evening, may be the fact that all the preparation materials can be washed and put away before the baking dish is placed in the oven, giving two (<em>or more<\/em>) randy valentines, including the cook, at least a full half hour to play together before it has to be put on the table.<\/p>\n<ul>\n<li>the recipe can be found <a href=\"http:\/\/italianfood.about.com\/od\/bakedpasta\/r\/blr1732.htm\">here<\/a>, so I don&#8217;t have to repeat it, but my own ingredients included fresh Rana pasta sheets, S\u00fcdtiroler Speck from Eataly, two red Anjou pears from Eataly, eight ounces of <a href=\"http:\/\/www.guffantiformaggi.com\/en\/\">Luigi Guffanti<\/a> mozzarella di bufala from Eataly, and far more Nigerian cayenne (purchased from Balducci&#8217;s five years ago!) than I could ever have imagined using in one dish (its enduring flavor and gentle, measured kick were both wonderful, perfect accompaniments to the rest of the ingredients)<\/li>\n<li>the wine was a Spanish sparkling ros\u00e9, <a href=\"http:\/\/www.raventos.com\/en\/conca-riu-anoia\/why-conca-riu-anoia\">Ravent\u00f3s i Blanc Conca del Riu Anoia Barcelona de Nit 2012<\/a> from <a href=\"http:\/\/www.chelseawinevault.com\/raventos-i-blanc-de-nit-rose-cava-2012\">Chelsea Wine Vault<\/a><\/li>\n<li>the Valentine&#8217;s Day music was &#8216;Tristan und Isolde&#8217;
