{"id":3351,"date":"2015-02-01T16:58:42","date_gmt":"2015-02-01T16:58:42","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=3351"},"modified":"2015-02-01T16:58:42","modified_gmt":"2015-02-01T16:58:42","slug":"calabrese-radiccchio-thursday-pasta-saturday","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=3351","title":{"rendered":"Calabrese, radiccchio; Thursday pasta Saturday"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/02\/Calabrese_radicchio.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3352\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/02\/Calabrese_radicchio.jpg\" alt=\"Calabrese_radicchio\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>Last night was quick and easy.\u00a0 I simply lit the oven to heat the remaining <a href=\"http:\/\/food.hoggardwagner.org\/2015\/01\/30\/spaghetto-with-tuna-sauce-finished-with-parsley\/\">spaghetto with tuna sauce <\/a>in cazuelas, then sprinkled some fresh parsley on top.<\/p>\n<p>But before putting the bowls in the Magic Chef I assembled a fresh <em>beforepasta<\/em>.\u00a0 I had more than enough late-season radicchio from the Union Square Greenmarket to (probably) use as a side dish for tonight&#8217;s dinner, and I also try to keep some form of salume in the refrigerator for emergencies.\u00a0 With that, together with a few flourishes, my first course was quickly lined up.<\/p>\n<ul>\n<li>radicchio from S.&amp;S.O. Produce Farms, washed and torn, tossed in a bowl with a few sultanas, &#8216;spring garlic&#8217; from Rogowski Farm, parsley from Eataly, good olive oil, a small amount of white balsamic vinegar , salt, and pepper; served with Colameco\u2019s uncured Calabrian salame (only one ounce on each plate!) from Eataly, drizzled with the same good olive oil; and slices of a fresh Trucio, from Sullivan Street Bakery, which had been purchased on our way home from a couple Chelsea galleries, and <a href=\"https:\/\/www.visualaids.org\/projects\/detail\/postcards\">Postcards From the Edge<\/a>, at <a href=\"http:\/\/www.luhringaugustine.com\/\">Luhring Augustine Gallery<\/a> only two hours earlier<\/li>\n<li>the wine was a red Italian,\u00a0<a href=\"http:\/\/hisotelaray.it\/en\/pdf\/filari_de_sant_antonii.pdf\"><span class=\"st\">Filari de Sant&#8217;Anton\u012b<\/span> Negroamaro Rosso Salento 2012<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Last night was quick and easy.\u00a0 I simply lit the oven to heat the remaining spaghetto with tuna sauce in cazuelas, then sprinkled some fresh parsley on top.
