{"id":3053,"date":"2015-01-09T18:40:20","date_gmt":"2015-01-09T18:40:20","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=3053"},"modified":"2015-01-09T18:40:20","modified_gmt":"2015-01-09T18:40:20","slug":"monkfish-on-a-bed-of-potatoes-tuscan-cabbage","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=3053","title":{"rendered":"monkfish on a bed of potatoes; Tuscan cabbage"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/01\/monkfish_potaotes_bay_olives_cavalo_nero.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-3055\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2015\/01\/monkfish_potaotes_bay_olives_cavalo_nero.jpg\" alt=\"monkfish_potaotes_bay_olives_cavalo_nero\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>This meal may be the one I repeat in our kitchen most often.\u00a0 It&#8217;s a Mark Bittman <a href=\"http:\/\/www.nytimes.com\/1999\/05\/19\/dining\/the-minimalist-fish-on-a-bed-of-potatoes.html\">recipe<\/a> which I cut out of the New York Times 15 years ago (<em>Note:<\/em> <em>I\u2019ve learned to use only about two thirds\u00a0of the suggested amount of olive oil; \u00a0any more than that and you\u2019ll probably find the potatoes swimming in it at the end<\/em>).\u00a0 The formula can be prepared with many <a href=\"http:\/\/food.hoggardwagner.org\/2014\/12\/07\/hake-potatoes-gaeta-olives-brussels-sprouts\/\">different kinds of fish<\/a>, basically any white fish.\u00a0 Bittman:\u00a0 \u201cMonkfish works very well . . . .\u00a0But other fillets will give similar results, including red snapper, sea bass, pollock, wolffish, even catfish.\u201d\u00a0 I make one other alteration to the recipe:\u00a0 While I almost never peel potatoes anyway before cooking, I definitely do not when preparing this dish.<\/p>\n<ul>\n<li>monkfish tail from P.E.&amp;D.D.
