{"id":2960,"date":"2014-12-26T07:00:19","date_gmt":"2014-12-26T07:00:19","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=2960"},"modified":"2014-12-26T07:00:19","modified_gmt":"2014-12-26T07:00:19","slug":"squid-ink-pasta-parsnips-pancetta-parsley-cheese","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=2960","title":{"rendered":"squid ink pasta, parsnips, pancetta, parsley, cheese"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/12\/Squid_ink_pasta_pancetta_parsnips.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2964\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/12\/Squid_ink_pasta_pancetta_parsnips.jpg\" alt=\"Squid_ink_pasta_pancetta_parsnips\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>We&#8217;ve been enjoying this recipe for so many years that I&#8217;m no longer certain of its origins, although\u00a0I suspect it started with,\u00a0Mario Batalli, even if the details may have been altered. \u00a0The original specified fresh pasta, but I&#8217;ve never hesitated to use dried, especially if it is of the highest quality.<\/p>\n<p>It may seem to be an unlikely combination of ingredients, but it&#8217;s definitely an inspired one.<\/p>\n<ul>\n<li>a thick piece of pancetta from Buon Italia, chopped into 1\/2 inch cubes, saut\u00e9ed in a large pan until browned, the fat rendered, the pancetta removed and replaced by\u00a0a small amount of butter and some parsnips from\u00a0Norwich Meadows Farm, peeled, halved and cut into half-moons, also saut\u00e9ed, then seasoned, followed by parsley from Stokes Farm, chopped,\u00a0the pancetta which had been removed earlier now returned to the mix, along with boiled and drained dried pasta of\u00a0<a href=\"http:\/\/sfoglini.com\/seasonal_pastas.html\">Cuttle Fish Spaccatelli from Spoglini<\/a> (purchased at the New Amsterdam Market), everything finally tossed together with the addition of some of the pasta cooking water, placed in bowls, and finished with\u00a0grated Parmesan cheese from Buon Italia<\/li>\n<li>the wine was an Austrian white (in a nod to sone of the more\u00a0Germanic elements\u00a0of the entre\u00e9), <a href=\"http:\/\/www.klwines.com\/detail.asp?sku=1156538\">Huber Gr\u00fcner Veltliner &#8216;Terrassen&#8217; 2013 from Traisental<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; We&#8217;ve been enjoying this recipe for so many years that I&#8217;m no longer certain of its origins, although\u00a0I suspect it started with,\u00a0Mario Batalli, even if the details may have been altered. \u00a0The original specified fresh pasta, but I&#8217;ve never hesitated to use dried, especially if it is of the highest quality.
