{"id":26485,"date":"2020-12-21T01:09:25","date_gmt":"2020-12-21T01:09:25","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=26485"},"modified":"2020-12-21T01:09:25","modified_gmt":"2020-12-21T01:09:25","slug":"storione-affumicato-carpaccio-di-barbabietola-magic-meal","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=26485","title":{"rendered":"storione affumicato carpaccio di barbabietola; &#8216;magic meal&#8217;"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-26498\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2020\/12\/sturgeon_beet.jpg\" alt=\"\" width=\"500\" height=\"500\" \/><\/p>\n<p>It was my 80th birthday, and the dinner &#8211; including the wines &#8211; was as exceptional as the occasion.<\/p>\n<p>I might say that in this latest appearance, our storybook &#8216;<a href=\"http:\/\/food.hoggardwagner.org\/2017\/04\/23\/the-magic-meal-25-years-on-conchiglie-al-forno\/\">Magic Mea<\/a>l&#8217; was actually upstaged by the first course, but I won&#8217;t, out of huge personal sentiment &#8211; and loyalty to both a great restaurant (<a href=\"https:\/\/www.exploretock.com\/alfornorestaurant\/\">Al Forno<\/a>, in Providence) and a home kitchen that has seen a lot over the decades.<\/p>\n<p>Still, the sturgeon was a tough act to follow. Some of it may have been the pure novelty, and the fact that the recipe,\u00a0 in all its simplicity, was entirely mine, but it really <em>was<\/em> delicious. That I grew up in the midwest, mid-century, where I was surrounded by sturgeon legends, and that Barry comes from Arkansas, <a href=\"https:\/\/www.arkansasonline.com\/news\/2018\/jan\/14\/sturgeons-still-little-known-despite-their-ancient\/\">one of the homes of the pallid and shovelnose<\/a>, had almost nothing to do with it.<\/p>\n<ul>\n<li>four ounces of sliced smoked American farmed sturgeon from Grace&#8217;s Marketplace placed on a bed of almost impossibly-thin slices of 2 small golden beets from Norwich Meadows Farm that had first been sprinkled with small amounts of wild fennel pollen from Buon Italia, a good Puglian olive oil (7Giorni), and Newman&#8217;s Own balsamic vinegar, topped with dollops of a Ronnybrook Farm cr\u00e8me fra\u00eeche mixed with lemon zest and chopped fresh thyme, garnished with some subtly peppery micro red mizuna from Two Guys from Woodbridge<\/li>\n<li>flat bread crisps (<a href=\"https:\/\/www.amazon.com\/dp\/B00S97ZUXS\/ref=cm_sw_r_cp_api_glc_fabc_66U3FbMJ5EC3W\">Firehook Baked Crackers<\/a> with rosemary and sea salt)<\/li>\n<li>the wine, which we had opened before the meal began and with which we toasted my great age and many great years shared with Barry, was a French (Champagne) sparkling, <a href=\"https:\/\/www.astorwines.com\/SearchResultsSingle.aspx?p=1&amp;search=38337\">Fran\u00e7ois Billion, Grand Cru, Brut Mill\u00e9sime 2010<\/a>, from Astor Wines<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-26499\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2020\/12\/Magic_Meal_Dec_2020.jpg\" alt=\"\" width=\"500\" height=\"500\" \/><\/p>\n<p>The magic part of the meal was\u00a0<em>Conchiglie al forno\u00a0<\/em>(last night it was actually <em>Lumaconi al forno<\/em>, the pasta this time being Setaro&#8217;s<i>\u00a0&#8216;snails&#8217;,\u00a0<\/i>from BuonItalia), a rich pasta course with a very friendly history <em>con noi<\/em> that goes back 20 years. This pasta is sometimes described as\u00a0<em>lumache<\/em>.<\/p>\n<p>It combines a pound of a large Campania artisanal shell shape pasta with roughly half a pound of sliced mushrooms, half a pound of butter, 4 Italian cheeses, lots of double cream, one head of sliced radicchio, and a generous amount of fresh sage.<\/p>\n<p>The recipe can be found on <a href=\"https:\/\/www.foodnetwork.com\/recipes\/conchiglie-al-forno-with-mushrooms-and-radicchio-recipe-1921093\">this site<\/a>.<\/p>\n<p><em>tip: <\/em><em>any earthy mushroom would work (I have access to many, and this time I used chestnut mushrooms<\/em><\/p>\n<p><em>tip:\u00a0<\/em><em>I used one large head of radicchio and it was more than enough<\/em><\/p>\n<p><em>tip: the gorgonzola should not be a dolce<\/em><\/p>\n<p><em>tip:<\/em>\u00a0you&#8217;ll need one very large bowl (or the emptied pasta pot)<\/p>\n<ul>\n<li>the wine was a very fine Italian (Tuscany) red, <a href=\"https:\/\/www.bottlerocket.com\/catalog\/product\/view\/id\/3725\/s\/barone-ricaso\">Barone Ricasoli, Chianti Gran Selezione 2015<\/a>, from Bottlerocket<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>It was my 80th birthday, and the dinner &#8211; including the wines &#8211; was as exceptional as the occasion.
