{"id":26329,"date":"2020-07-12T22:59:58","date_gmt":"2020-07-12T22:59:58","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=26329"},"modified":"2020-07-12T22:59:58","modified_gmt":"2020-07-12T22:59:58","slug":"bacon-and-eggs-and-pretzel-roles","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=26329","title":{"rendered":"bacon and eggs and pretzel rolls"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-26331\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2020\/07\/brunch_pretzel_rolls.jpg\" alt=\"\" width=\"500\" height=\"500\" \/><\/p>\n<p>On Saturday I learned that our <em>very<\/em> local (less than one block away) <a href=\"https:\/\/downtoearthmarkets.com\/markets?market=Chelsea+Farmers+Market\">Chelsea Saturday greenmarket<\/a> has several new local vendors, one of which, <a href=\"https:\/\/www.breadivore.com\/s\/shop\">Breadivore<\/a>, offers, among other delicacies, pretzel rolls, in a choice of plain, black pepper, or grainy mustard.<\/p>\n<p>Pretzel rolls! From a stall just down the street! And made in Long Island City!<\/p>\n<p>I picked a pepper pretzel pack, and today we had [every one of them] with our more usual bacon and eggs; I sliced them horizontally and dry-toasted each on the surface of a seasoned steel pan above a medium flame.<\/p>\n<p>They were wonderful.<\/p>\n<ul>\n<li>the elements of this little feast, aside from the pretzel rolls, were: a few rashers of some quite thick <a href=\"https:\/\/www.dicksonsfarmstand.com\/\">Dickson&#8217;s Farmstand<\/a> sugar cured house-made bacon; 6 fresh eggs from <a href=\"https:\/\/www.ediblemanhattan.com\/foodshed-2\/old-mother-hubbert-dairy-closest-raw-milk-new-york\/\">Old Mother Hubbert Dairy<\/a>, sprinkled with freshly ground black pepper,\u00a0Baden seasoning salt (the gift of a friend who had been given the recipe while visiting the Upper Rhine), whose ingredients included sea salt, 5 different seasoning peppers, dehydrated vanilla, lemon and lime, by a chef in Baden-Baden itself), a crushed section of a bight red dried\u00a0<em>Aj\u00ed dulce<\/em> pepper from <a href=\"https:\/\/eckertonhillfarm.com\/\">Eckerton Hill Farm<\/a>, and garnished with some trimmed wood sorrel from <a href=\"https:\/\/www.willowwisporganic.com\/\">Willow Wisp Organic Farm<\/a>; some whole milk (dear to this midwestern son of a long line of Wisconsin and Rhineland dairy farmers), specifically, an outstanding, close-to-raw milk-taste product processed with a remarkable low-input low-impact pasteurizer, also from Mother Hubbert; a small salad of torn fris\u00e9e from Willow Wisp Farm warmed in a bit of Whole Foods house Portuguese olive oil with some chopped spring red onion from <a href=\"https:\/\/www.norwichmeadowsfarm.com\/\">Norwich Meadows Farm<\/a>, tossed with chopped dill, also from Norwich Meadows Farm, dressed with more olive oil and drops of a Columela Rioja 30 Year Reserva sherry vinegar<\/li>\n<\/ul>\n<p>After, there was coffee.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-26334\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2020\/07\/coffee_resistance.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>we were introduced to <a href=\"https:\/\/www.chicagoreader.com\/chicago\/dark-roast-with-a-whiff-of-anarchy\/Content?oid=1180957\">David Meyers&#8217; Resistance Coffee<\/a> early last year by a friend and fellow member [of it], and we&#8217;re not likely to ever let go<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>this Sunday&#8217;s liturgical music choice was <a href=\"https:\/\/www.ensemblecorrespondances.com\/programs\/lecons-de-tenebres-2\/?lang=en\">Michel-Richard de Lalande\u00a0(1657-1726), &#8216;Le\u00e7ons De T\u00e9n\u00e8bres&#8217;, with soprano Sophie Karth\u00e4user, the Ensemble Correspondances conducted by S\u00e9bastien Dauc\u00e9<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>On Saturday I learned that our very local (less than one block away) Chelsea Saturday greenmarket has several new local vendors, one of which, Breadivore, offers, among other delicacies, pretzel rolls, in a choice of plain, black pepper, or grainy mustard.
