{"id":2599,"date":"2014-11-11T00:45:15","date_gmt":"2014-11-11T00:45:15","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=2599"},"modified":"2014-11-11T00:45:15","modified_gmt":"2014-11-11T00:45:15","slug":"salume-arugula-then-squid-braised-beet-greens","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=2599","title":{"rendered":"salume, arugula; then squid, braised beet greens"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/11\/pancetta_arugula_radicchio_bread.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2605\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/11\/pancetta_arugula_radicchio_bread.jpg\" alt=\"pancetta_arugula_radicchio_bread\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>This meal included\u00a0a number of elements, at least four food groups, and two major courses, but it still managed to retain a reasonable simplicity,\u00a0while more than satisfying our appetites, and providing an excellent excuse for enjoying a delightful wine.<\/p>\n<p>The first course:<\/p>\n<ul>\n<li>\u2018Pancetta Americana\u2019 made by La Quercia, from Eataly, drizzled with some very good olive oil,\u00a0with Lamparelli, from Buon Italia<\/li>\n<li>arugula from Migliorelli Farm, tossed with a bit of radicchio (which we brought home\u00a0from <a href=\"http:\/\/beaconpantry.com\/index.php\">Beacon Pantry<\/a>,\u00a0a\u00a0wonderful shop in Beacon, NY) and\u00a0drizzled with the same good oil, and sprinkled with white balsamic vinegar, salt, and pepper<\/li>\n<li>slices of \u2018Rustico Classico\u201d from Eataly<\/li>\n<\/ul>\n<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/11\/squid_white_beet_greens.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2606\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/11\/squid_white_beet_greens.jpg\" alt=\"squid_white_beet_greens\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>The second course:<\/p>\n<ul>\n<li>squid from PE &amp; DD, toasted in a large enameled cast iron oiled pan with dried wild Italian oregano, chiles and salt, drizzled with lemon and olive oil, then roasted for only a few minutes<\/li>\n<li>white beet greens from Norwich Meadows Farm, wilted\u00a0with juicy garlic halves, from Berried Treasures, which had been been able to\u00a0sweat\u00a0in olive oil, then seasoned with salt, and pepper<\/li>\n<li>the wine for both courses was an Italian white, <a href=\"http:\/\/centopassisicilia.it\/en\/pdf\/presskit.pdf\">Centassi Grillo Terre Siciliane I.G.T.
