{"id":25947,"date":"2020-03-28T06:48:24","date_gmt":"2020-03-28T06:48:24","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=25947"},"modified":"2020-03-28T06:48:24","modified_gmt":"2020-03-28T06:48:24","slug":"sauteed-sea-bass-chili-mushrooms-endive-balsamic-butter","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=25947","title":{"rendered":"saut\u00e9ed sea bass, chili mushrooms; endive, balsamic butter"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-25948\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2020\/03\/sea_bass_mushrooms_endive.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>This blog has been silent for two months, so I can&#8217;t blame my neglect on the plague abroad in the land today.<\/p>\n<p>Going forward however, I&#8217;m going to invoke the impact of the coronavirus as at least a part of the explanation for why these posts ae going to be more abbreviated than they were in the past.<\/p>\n<p>Almost every ingredient will still be coming from our local Union Square Greenmarket, as long as it is able to serve our community.<\/p>\n<p>I&#8217;m still going to be cooking almost every night, and I will be trying to make each meal as tasty as I can, and interesting enough to share, even if I won&#8217;t always get around to doing so.<\/p>\n<p>So far we&#8217;ve been able to enjoy some pretty wonderful meals, thanks to my ability to continue accessing the sources that had made their equivalents possible in the past.<\/p>\n<p>last night&#8217;s meal was one of the best, thanks mostly to the <a href=\"https:\/\/www.grownyc.org\/greenmarket\/manhattan-union-square-m\">Union Square Greenmarket<\/a>\u00a0and the other markets in the city, the\u00a0<a href=\"https:\/\/www.grownyc.org\/blog\/farmers-markets-deemed-essential-businesses\">intense work and dedication<\/a>\u00a0of their people during these days, along with that of the farmers, fishers, bakers, and other artisans who bring us this bounty.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-25959\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2020\/03\/bass_bucket-1.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>the very fresh local black sea bass, from Pura Vida Seafood Company, was saut\u00e9ed simply, with no seasonings added, other than local sea salt and fresh pepper, cooked perfectly \u00e0\u00a0<em>point<\/em>, and\u00a0also perfectly delicious, crispy too; the blue oyster mushrooms, also saut\u00e9ed, were joined by a tiny bit of dried hot smoked chili and only slightly larger amount of a terrific seasoning pepper with no heat, then a bit of fresh lemon juice and fresh chopped parsley; the saut\u00e9ed yellow endive was finished with a pretty simple balsamic vinegar butter and topped with a sprinkling of fresh oregano<\/li>\n<li>the wine was a\u00a0<a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/www.vivino.com\/domaine-famille-paquet-macon-lugny-les-charmes-g973a\/w\/6479080?utm_source=app&amp;year=2017\">M\u00e2con-Lugny Les Charmes 2017<\/a><\/li>\n<li>the music was a recording of\u00a0<a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/www.prestomusic.com\/classical\/products\/8736862--brahms-complete-string-quartets-piano-quintet\">Brahms&#8217; complete string quartets and his piano quintet, by Quatuor Strada and\u00a0\u00c9ric Le Sage<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This blog has been silent for two months, so I can&#8217;t blame my neglect on the plague abroad in the land today.
