It may have still been some people&#8217;s holiday, but we went easy on December 26.<\/p>\n<p>There was a beautiful first course of an excellent salume.<\/p>\n<ul>\n<li>slices of <a href=\"https:\/\/italian-salami.com\/coppa-piacentina-dop\/\">copa DOC Piacentini<\/a> from Flatiron Eataly drizzled with\u00a0Greek olive oil, \u2018Demi\u2019, produced in Laconia, Velles, in the Peloponnese, and bought from John, a member of the family that produced it, at the 23rd Street Greenmarket last summer<\/li>\n<li>slices from one of She Wolf Bakery&#8217;s wonderful baguettes<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-25674\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2020\/01\/Gallo2.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>The main course was a fairly simple pasta dish, but it too scored in both color and taste departments.<\/p>\n<ul>\n<li class=\"p3\">two rocambole garlic cloves from Keith\u2019s Farm heated in a little olive oil inside a large antique heavy copper pot until beginning to soften, followed by\u00a0one thinly sliced small, rather hot yellow Marzano seasoning pepper\u00a0from Windfall Farms, and after it, a bit of Redbor kale from Oak Grove Plantation stirred in, saut\u00e9ed until it was partly wilted, 12 ounces of Eataly\u2019s fresh <em style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">creste di gallo<\/em><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\"> pasta (<\/span><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">durum flour, eggs) that had been allowed to boil only until the moment when it was <em>not<\/em> fully cooked, tossed in, along with some of the pasta water, the mix stirred over high heat until the liquid had emulsified, then\u00a0<\/span>arranged inside 2 shallow bowls and scattered with some scissored Brooklyn chives from West Side Market (<a href=\"https:\/\/squarerootsgrow.com\/\">Square Roots, &#8220;hand-harvested in Brooklyn&#8221;<\/a>), a little more olive oil\u00a0drizzled around the edges<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine throughout the meal was and Italian (Marche) white,\u00a0<a href=\"https:\/\/www.eatalyvino.com\/wines\/La-Staffa-Verdicchio-dei-Castelli-di-Jesi-Classico-2018-w16381001p\">La Staffa &#8211; Verdicchio dei Castelli di Jesi Classico 2018<\/a>, from <a href=\"https:\/\/www.eatalyvino.com\/\">Eataly Vino<\/a><\/li>\n<li>the music throughout the meal was again\u00a0the <a href=\"https:\/\/www.cc-seas.columbia.edu\/wkcr\/story\/bach-festival-2019\">2019 WKCR-FM\u00a0 Bachfestival<\/a>, streaming<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It was the day after a feast.
