Besides, earlier in the day I had learned from the <a href=\"https:\/\/www.grownyc.org\/greenmarket\/manhattan-union-square-f\">GrowNY site<\/a> that there would be no fish at the Union Square Greenmarket that day, all of which goes toward explaining how this meal came together as it did.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-25600\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2020\/01\/salmon_potatoes_red_kale.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>one gorgeous 17-ounce section from a fillet of wild caught Pacific sockeye salmon (previously frozen), from Chelsea Whole Foods Market, halved, placed unseasoned, skin sides up, inside a heavy medium size enameled cast iron pan in which a little more than 2 tablespoons of a rich local Organic Valley \u2018Cultured Pasture Butter\u2019 had been allowed to melt over a low to medium flame until the foam had begun to recede, the pan placed inside a 425\u00ba oven until the salmon had barely cooked, meaning only about 8 minutes altogether (flipped over after 5), removed, arranged on the plates, seasoned, only now, with a finishing salt, the gift of a friend who had been given the recipe (the ingredients included sea salt, 5 different seasoning peppers, plus dehydrated vanilla, lemon and lime) by a chef in Baden-Baden, and some freshly-ground black pepper, scattered with scissored chives from Phillips Farms, allowed to rest for a couple minutes before serving, covered loosely with tin foil, arranged on the plates<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-25606\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2020\/01\/potatoes_Masquerade.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>nine small <a href=\"https:\/\/www.mainepotatolady.com\/productcart\/pc\/viewCategories.asp?idCategory=166\">Masquerade potatoes<\/a> from Norwich Meadows Farm, scrubbed, boiled unpeeled in generously-salted water until barely cooked through, drained, halved, dried in the still-warm large vintage Corning Pyrex Flameware blue-glass pot in which they had cooked, tossed with a little olive oil, seasoned with salt and pepper, and tossed with chopped thyme leaves from West Side Market (Uncle Vinny&#8217;s)<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-25607\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2020\/01\/kale_redbor.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>some beautiful Redbor kale from Oak Grove Plantation, wilted with olive oil in which one thinly-sliced rocambole garlic clove from Keith\u2019s Farm had been allowed to heat until pungent, seasoned with salt, black pepper, and a drizzle of fresh olive oil<\/li>\n<li>the wine was\u00a0a New York (Hudson River) red,\u00a0<a href=\"https:\/\/www.rawwine.com\/wine\/luca-skin-contact-traminette-2\/\">Cabernet Franc \u2013 Bruynswick Vineyard, 2017<\/a>, from\u00a0<a href=\"https:\/\/www.rawwine.com\/profile\/wild-arc-farm\/\">Wild Arc Farm<\/a><\/li>\n<li>the music was\u00a0Rossini\u2019s \u2018<a href=\"https:\/\/en.wikipedia.org\/wiki\/Le_comte_Ory\">Le Comte Ory<\/a>\u2018,\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=90926\">Jes\u00fas Lopez-Cobos conducting the\u00a0Bologna Teatro Comunale Orchestra\u00a0and the Prague Chamber Chorus, with Stefania Bonfadelli, Juan Diego Fl\u00f3rez, Alastair Miles, and Marie-Ange Todorovitch<\/a><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The Pacific Northwest (Alaska waters?) salmon at our local Whole Foods Market looked particularly good on that Monday, and the price was really good.
