beans and tomatoes; fennel"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/10\/meatballs_beans_fennel.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2543\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/10\/meatballs_beans_fennel.jpg\" alt=\"meatballs_beans_fennel\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>This meal used\u00a0the <a href=\"http:\/\/food.hoggardwagner.org\/2014\/09\/19\/meatballs-braised-beet-greens-roasted-fingerlings\/\">second<\/a> half\u00a0of\u00a0our\u00a0freezer\u00a0stash of\u00a0some\u00a0wonderful rose veal meatballs\u00a0from\u00a0<a style=\"color: #772124;\" href=\"http:\/\/www.gaiasbreathfarm.com\/\">Gaia\u2019s Breath Farm<\/a>. \u00a0\u00a0I picked them up from\u00a0<a style=\"color: #772124;\" href=\"http:\/\/www.summersendorchard.com\/\">Summers End Orchard<\/a>\u00a0at\u00a0<a style=\"color: #772124;\" href=\"http:\/\/www.newamsterdammarket.org\/\">New Amsterdam\u00a0Market<\/a>\u00a0this summer. \u00a0 Because of the corrupt marriage of\u00a0<a href=\"http:\/\/gothamist.com\/2014\/09\/19\/south_street_seaport_fight.php\">corporate money and politics<\/a>, the New Amsterdam Market is no more, at least for now, and since\u00a0I don&#8217;t expect to be\u00a0making my own balls,\u00a0I&#8217;m going to have to find another, presumably even more local source.<\/p>\n<ul>\n<li>eight perfect sage leaves from Phillips Farm, cooked in butter in an enameled cast iron pan over moderately high heat until crisp, before transferred to a plate, then six\u00a0<a style=\"color: #772124;\" href=\"http:\/\/www.theguardian.com\/environment\/2012\/may\/27\/rose-veal-jimmy-doherty\">rose veal<\/a>\u00a0meatballs from\u00a0<a style=\"color: #772124;\" href=\"http:\/\/www.gaiasbreathfarm.com\/\">Gaia\u2019s Breath Farm<\/a>,\u00a0purchased at the\u00a0<a style=\"color: #772124;\" href=\"http:\/\/www.newamsterdammarket.org\/\">New Amsterdam\u00a0Market<\/a>\u00a0this summer with the good graces of their friend\u00a0<a style=\"color: #772124;\" href=\"http:\/\/www.summersendorchard.com\/\">Summers End Orchard<\/a>\u00a0in Unadilla, New York,\u00a0lightly floured, cooked in the same butter over moderate heat until lightly browned, transferred to another plate and kept warm, white wine added to the pan and simmered until almost evaporated while scraping the brown bits from the bottom, a few tablespoons of good vegetable stock added and simmered two\u00a0minutes, the meatballs transferred to the serving plates, their juices and the sauce poured over them, the\u00a0sage leaves added as garnish<\/li>\n<li>fresh canary\u00a0beans from Berried Treasures, rinsed and placed in a saucepan under two inches of water along with sage from Phillips Farm\u00a0and a fresh bay leaf from West Side Market,\u00a0slowly heated for about 25 minutes, then added to a mixture of saut\u00e9ed shallots from Mountain Sweet Berry Farm and halved cherry\u00a0tomatoes (yellow and red) from Berried Treasures, finished with lemon juice, and parsley from Phillips Farm<\/li>\n<li>a small collection of fennel stems, from the fennel bulb in the meal of the night before, from Norwich Meadow Farms, saut\u00e9ed over\u00a0medium high heat\u00a0with garlic, chiles, and fennel seeds in\u00a0a large iron pan until the fennel began to color, then, with the heat lowered and the pan covered, cooked for ten minutes, a very generous amount of chopped fennel fronds added at the end<\/li>\n<li>the wine was a light red from the S\u00fcdtirol (northern Italy),\u00a0<a href=\"http:\/\/www.enotecalecantinedeidogi.com\/prodotto-143642\/Schiava-Gentile-Edelvernatsch-2013-Egger-Ramer.aspx\">Egger-Ramer Schiava Gentile &#8211;
