Yes, and of course it was all good.<\/p>\n<p>Otherwise all I can think to say otherwise is how quickly Barry and I have become comfortable with the idea of traditional German cuisine melded with that of the deep south hundreds of years ago. <a href=\"http:\/\/food.hoggardwagner.org\/2018\/06\/01\/grilled-andouille-cranberry-mustard-tomatoes-savory-kale\/\">I wrote a little about it<\/a> in the post describing our first exposure to the story of\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/German_Coast\">Louisiana&#8217;s German coast<\/a> (Deutsche K\u00fcste\/C\u00f4te des Allemands).<\/p>\n<ul>\n<li>four links of Louisiana German Coast-style spicy Andouille sausage 12 ounces) from Schaller &amp; Weber\u2019s Yorkville store placed inside a large <a href=\"http:\/\/www.ndga.net\/articles\/gmflameware.php\">Pyrex Flameware<\/a> pot, filled with just enough cold water to cover, heated over a medium-high flame until the water had reached a gentle simmer, by which time, now fully cooked, they were removed, drained, and dried on a paper towel before being placed inside <a href=\"https:\/\/twitter.com\/wagnerblog\/status\/1109628281752641536\">one of my prized<\/a> ancient perfectly seasoned <a href=\"https:\/\/en.wikipedia.org\/wiki\/Wagner_Manufacturing_Company\">Wagner Ware<\/a> cast iron pans over high heat (after its surface had been brushed with a very small amount of Mac Nut oil), seared, turning frequently until colored on all sides, then arranged on the plates with that brilliant condiment creation,\u00a0<a href=\"http:\/\/beavertonfoods.com\/product\/inglehoffer-cranberry-mustard\/\">Inglehoffer\u00a0 cranberry mustard<\/a><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24865\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/11\/Peter_Wilcox.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>one pound of so of Peter Wilcox potatoes (purple skin, golden flesh) from Windfall Farms, scrubbed, skins left on, halved, tossed with a little olive oil, sea salt, freshly ground black pepper, rosemary leaves from Phillips Farms, a bit of crushed dried Italian myrtle (It. Mirto) leaves\u00a0from Buon Italia, and the same amount of dry crushed golden habanada pepper, the potatoes arranged, cut side down, on a large Pampered Chef unglazed ceramic pan, roasted at about 350\u00ba-375\u00ba for about 30 minutes, garnished with Micro red vein sorrel from Two Guys from Woodbridge<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24866\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/11\/collards_Keiths_Farm.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>one bunch of tender collards from Keith&#8217;s Farm, stripped of most of their stems and fairly roughly cut, washed several times and drained, transferred to a smaller bowl very quickly, in order to retain as much of the water clinging to them as possible, braised inside a large, heavy antique tin-lined copper pot in which 2 halved cloves of &#8216;Chesnok Red&#8217;\u00a0garlic\u00a0from Alewife Farm\u00a0had first been allowed to sweat in\u00a0some olive oil, finished with salt and pepper, finished with a drizzle of olive oil<\/li>\n<li>the wine was a California (North Coast\/Mendocino) red,\u00a0<a href=\"https:\/\/us.nakedwines.com\/products\/ondine-chattan-mendocino-rhone-blend-2018\">Ondine Chattan Mendocino Memento 2018<\/a>, from <a href=\"https:\/\/us.nakedwines.com\/#\/\">Naked Wines<\/a><\/li>\n<li>the music was an album of music by the Dutch composer\u00a0<a href=\"https:\/\/www.challengerecords.com\/products\/1405937883\">Richard Rijnvos, &#8216;Le rideau se baisse lentement durant toute la musique suivante&#8217;, performed\u00a0 by the Ives Ensemble<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>German creole cookery?
