Seafood sea salt, freshly ground black pepper, and both the green and the capocollo drizzled with some good olive oil (Renieris Estate &#8216;Divina&#8217; (a Koroneiki varietal) from Hania, Crete, purchased at Whole Foods Market<\/li>\n<li>slices of &#8216;Whole wheat Redeemer Bread&#8217; (wheat, water, salt) from Lost Bread Co.<\/li>\n<\/ul>\n<p>Except for the time it took to boil the pasta, the second course took only a few minutes to complete.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24606\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/10\/sage_Keiths.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">a few tablespoons of a rich butter,\u00a0Vermont Creamery Butter (total fat 12g, 83% butter fat), from Whole Foods Market (unfortunately they don&#8217;t stock the producer&#8217;s unsalted version), melted slowly inside a large antique copper pot before a small handful of fresh whole sage leaves from Keith&#8217;s Farm, one finely sliced fresh habanada pepper from\u00a0Campo Rosso Farm, and a pinch of hickory smoked Scotch Bonnet pepper from Eckerton Hill Farm were stirred in, the mix seasoned with local P.E. &amp; D.D. Seafood sea salt and some freshly ground black pepper, and, as soon as it had finished cooking to <\/span><em style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">al dente<\/em><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">, 8 ounces from a one-pound box of <\/span><a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/www.sfoglini.com\/products\/einkorn-blend-macaroni\">Sfoglini Einkorn Macaroni<\/a><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">, together with a cup of the cooking water, stirred in, the heat under the pan pushed to high and the mix cooked, stirring, until the liquid had emulsified, a little olive oil then drizzled around the edges and some <\/span><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">Parmigiano Reggiano (aged 24 months) from Whole Foods Market shaved on top, garnished with\u00a0<\/span><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">micro red amaranth from Windfall Farms\u00a0<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine for both courses was a Spanish (Catalonia\/Tarragona\/<a href=\"https:\/\/en.wikipedia.org\/wiki\/Montsant_DO\">Monsant<\/a>) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/franck-massard-herbis-verdejo-2018?cid=US\">Franck Massard Herbis Verdejo 2018<\/a>, from\u00a0<a href=\"https:\/\/us.nakedwines.com\/#\/\">Naked Wines<\/a><\/li>\n<li>the music throughout was Mendelssohn&#8217;s wonderful 1832 secular cantata on Druidic themes, &#8216;<a href=\"https:\/\/en.wikipedia.org\/wiki\/Die_erste_Walpurgisnacht\">Die Erste Walpurgisnacht<\/a>&#8216;, based on the poem by Goethe, <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=1921785\">Kurt Mazur conducting\u00a0 the Leipzig Gewandhaus Orchestra in the Studio Vers\u00f6hnungskirche<\/a>; we followed that with other pieces by Mendelssohn<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>We were trying for seriousness here, even if both plates ended up looking a little frivolous.
