{"id":24495,"date":"2019-10-09T22:41:38","date_gmt":"2019-10-09T22:41:38","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=24495"},"modified":"2019-10-09T22:41:38","modified_gmt":"2019-10-09T22:41:38","slug":"bauernwurst-tomato-garlic-and-habanada-roasted-squash","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=24495","title":{"rendered":"bauernwurst; tomato; garlic and habanada-roasted squash"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24503\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/10\/sausage_squash_tomato.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>The meal included elements of at least three different food traditions, but it wasn&#8217;t dominated by any one of them, so naturally we decided to serve a South African wine.<\/p>\n<ul>\n<li>four links of <a href=\"https:\/\/schallerweber.com\/brick-mortar\/new-york-store\/\">Schaller &amp; Weber<\/a>&#8216;s wonderful\u00a0<a href=\"https:\/\/schallerweber.com\/product\/bauernwurst\/\">Bauernwurst<\/a>, a coarse, smokey, very traditional German country style sausage, placed next to each other inside a medium <a href=\"https:\/\/www.ebay.com\/itm\/Vintage-1930s-Set-Pyrex-Flameware-Blue-Tint-Glass-Saucepans-Skillet-Handle\/143403179372?_trkparms=aid%3D555018%26algo%3DPL.SIM%26ao%3D2%26asc%3D20160908110712%26meid%3D89ff6f80be9a4bd080e375d8cd96fe83%26pid%3D100677%26rk%3D12%26rkt%3D30%26sd%3D293212638276%26itm%3D143403179372%26pmt%3D1%26noa%3D0%26pg%3D2385738&amp;_trksid=p2385738.c100677.m4598\">Pyrex blue Flameware<\/a> pot which was then filled with cold water, just enough to cover, heated over a medium-high flame until the water had reached a gentle simmer (by which time they were fully cooked), removed, drained, dried on a paper towel, and placed above a high flame inside a seasoned cast iron pan, after its surface had been brushed with a thin layer of olive oil, seared, turning frequently, until colored on all sides, arranged on the plates with dabs of a rich shallot, garlic, paprika and turmeric mustard from\u00a0<a href=\"http:\/\/www.hudsonvalleycharcuterie.com\/home\">Hudson Valley Charcuterie<\/a>, and a second mustard, <a href=\"https:\/\/www.loewensenf.de\/de\/shop\/184740\/loewensenf-senfspezialitaet-honig-dill\">L\u00f6wensenf H\u00f6nig-Dill<\/a><\/li>\n<li>one heirloom tomato from <a href=\"https:\/\/www.racefarmllc.com\/\">Race Farm<\/a>, halved horizontally, seasoned with local sea salt from <a href=\"https:\/\/vimeo.com\/17852417\">P.E. &amp; D.D. Seafood<\/a> and freshly ground black pepper, softened on both sides in a little olive oil inside a small copper skillet, arranged on the plates on a bed of olive oil-drizzled baby arugula from\u00a0<a href=\"https:\/\/www.instagram.com\/camporossofarm\/?hl=en\">Campo Rosso Farm<\/a>, the\u00a0 tomatoes sprinkled with a bit of chopped chive garlic seed from <a href=\"https:\/\/www.spaceonryderfarm.org\/\">Space on Ryder Farm<\/a>, themselves drizzled with a touch more oil<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24522\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/10\/squash_blue_ballet.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>one small (5-inch\/27 ounce) <a href=\"https:\/\/www.johnnyseeds.com\/vegetables\/squash\/winter-squash\/blue-ballet-organic-hubbard-squash-seed-676G.html\">&#8216;Blue Ballet&#8217;
