{"id":24439,"date":"2019-10-08T00:16:52","date_gmt":"2019-10-08T00:16:52","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=24439"},"modified":"2019-10-08T00:16:52","modified_gmt":"2019-10-08T00:16:52","slug":"spaghetti-alle-vongole-in-bianco-long-island-littlenecks","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=24439","title":{"rendered":"spaghetti alle vongole in bianco (long island littlenecks)"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24440\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/10\/clams_spaghetti.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>We had a lot of clams (27), with only 10 ounces of a great spaghetti, but, hey, they were smaller (littlenecks)\u00a0 than we sometimes have with this dish, so there&#8217;s that.<\/p>\n<p>It&#8217;s curious however that we&#8217;ve found less clam and more pasta does nothing to compromise the flavor of this dish, and in fact <em>less<\/em> might even be preferred, but we won&#8217;t complain, especially when the bivalves are as fresh and delicious as these were.<\/p>\n<ul>\n<li>ten ounces of <a href=\"http:\/\/www.pastificioafeltra.it\/\">Afeltra<\/a>\u00a0<em>pasta\u00a0artigianale di Gragnano I.G.P.<\/em>\u00a0100%\u00a0<em>grano Italiano biologico<\/em>\u00a0from Flatiron Eataly that had been cooked\u00a0<em>al dente<\/em>\u00a0and drained,\u00a0tossed into a large, enameled cast iron pot in which three minced <a href=\"https:\/\/www.gourmetgarlicgardens.com\/chesnok-red.html\">&#8216;Chesnok Red&#8217;\u00a0garlic<\/a> cloves (whose origin is the Republic of Georgia) from Alewife Farm\u00a0and one whole dried Itria-Sirissi chili (peperoncino di Sardegna intero) from Buon Italia [two would have been better] were heated in some olive oil, mixed well, followed by two dozen (actually, 27, the extra being a fish monger&#8217;s traditional lagniappe)\u00a0<a href=\"https:\/\/www.ediblelongisland.com\/2015\/06\/24\/clamology-101-know-local-clams\/\">wild eastern Long Island littleneck clams<\/a> from the American Seafood Company stall in that day at the Saturday\u00a0<a href=\"http:\/\/downtoearthmarkets.com\/markets?region=Manhattan&amp;market=Chelsea+Farmers+Market\">Chelsea\u2019s Down to Earth Farmers Market\u00a0<\/a>on West 23rd Street, along with their cooking juices, that had just been scrubbed and steamed with a little water inside a third pot until they had opened (and every one of them did open), the entire mix sprinkled with a few tablespoons of parsley from Phillips Farms, chopped, and served in shallow bowls, low bowls for the shells to the side<\/li>\n<li>slices from a loaf of \u2018Seedy Grains\u2019 bread (wheat, spelt, rye, and barley organic bread flours; buckwheat; oats; flax sesame, sunflower, and pumpkin seeds; water, and salt) from\u00a0Lost Bread Co.<\/li>\n<li>the wine was a Portuguese (<span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">Vinho Verde) white,\u00a0<\/span><a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/www.chambersstwines.com\/Products\/73279\/2017-antonio-lopes-ribeiro-casa-de-mouraz-vinho-verde-biotite\">Antonio Lopes Ribeiro 2017 (Casa de Mouraz) Vinho Verde &#8216;Biotite&#8217;<\/a><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">, from <\/span><a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/www.chambersstwines.com\/\">Chambers Street Wines<\/a><\/li>\n<li>the music was a cantata-like work by the interesting Dutch\/German composer <a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"http:\/\/www.operatoday.com\/content\/2010\/09\/julius_rontgen_.php\">Julius R\u00f6ntgen (1855-1932), &#8216;Aus Goethes Faust&#8217;,\u00a0 for orchestra, organ, chorus, and soloists, David Porcelijn conducting the Netherlands Symphony Orchestra and\u00a0the Koor van de Nationale Reisopera Enschede, with Machteld Baumans, Marcel Beekman, Andre Morsch, Andre Post, Mark Richardson, and Dennis Wilgenhof\u00a0\u00a0<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>We had a lot of clams (27), with only 10 ounces of a great spaghetti, but, hey, they were smaller (littlenecks)\u00a0 than we sometimes have with this dish, so there&#8217;s that.
