It&#8217;s typical for me that once I had an idea, even if it was about a single ingredient, any reluctance vanished. This time it was remembering that I had some\u00a0Mexican sour gherkins in the crisper drawer.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24153\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/Mexican_gherkins_pepquinos.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">short pieces cut from a part of one garlic scape from Phillips Farms saut\u00e9ed until softened in a little olive oil inside a large antique copper pot, followed by 8 ounces of halved \u2018Mexican gherkins\u2019 (which are not actually cucumbers, but \u2018<\/span><em style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">pepquinos<\/em><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">\u2019, or \u2018<\/span><em style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">Melothria scabra<\/em><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">\u2018), along with a tiny bit of Brazilian wax pepper from Eckerton Hill Farm, <\/span><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">after which 8 ounces of a New York pasta, Sfoglini whole grain reginetti, were mixed in, together with about a cup of reserved pasta cooking water, the mix then stirred in the pot over high heat until the liquid had emulsified, after which some small tomatoes were added (less than a handful), halved, remaining from a basket of mixed colors and shapes from Tamarack Hollow Farm that had been incorporated into <a href=\"http:\/\/food.hoggardwagner.org\/2019\/09\/15\/smoked-rillettes-herbed-striped-bass-cauliflower-tomato\/\">an earlier meal<\/a>, plus both\u00a0<\/span>the zest and juice of a Whole Foods organic California lemon, the pasta drizzled with a little bit of tomato water (same tomatoes!) remaining from that same meal, seasoned with local sea salt and freshly-ground black pepper, placed in 2 shallow bowls, topped with micro lemon balm from Two Guys from Woodbridge, drizzled with a little olive oil<\/li>\n<li>the wine throughout was a Portuguese (Douro) white,\u00a0<a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/us.nakedwines.com\/wines\/quevedo-family-alvarinho-2018?cid=US\">Quevedo Family Alvarinho 2018,<\/a><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">\u00a0from\u00a0<\/span><a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/us.nakedwines.com\/full_site#\/\">Naked Wines<\/a><\/li>\n<li>the music was <a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=174209\">an album of works by Charles Avison which included 6 concertos &#8216;in seven parts&#8217; (transcriptions of Scarlatti sonatas), performed by Cafe Zimmermann<\/a>; <a href=\"https:\/\/en.wikipedia.org\/wiki\/Charles_Avison\">Charles Avison (1709-1770)<\/a>\u00a0was a <em>rara avis<\/em>, a good eighteenth-century English composer)<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It was so good, yet only an hour before I had begun to assemble this meal I wasn&#8217;t into cooking anything.
