{"id":24111,"date":"2019-09-15T23:41:41","date_gmt":"2019-09-15T23:41:41","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=24111"},"modified":"2019-09-15T23:41:41","modified_gmt":"2019-09-15T23:41:41","slug":"herb-rubbed-shark-steak-tomatoes-sauteed-cucumbers","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=24111","title":{"rendered":"herb-rubbed shark steak; tomatoes; saut\u00e9ed cucumbers"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24140\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/shark_tomato_cucumber.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>At the fish stand on Friday, Paul had the very tip of a shark fin in his hand, but I went with the steaks.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24141\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/shark_thresher-bucket.jpg\" alt=\"\" width=\"500\" height=\"500\" \/><\/p>\n<ul>\n<li>two thick 9-ounce\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Thresher_shark\"><em>alopias vulpinus<\/em> (thresher shark)<\/a> steaks, from Pura Vida Seafood Company, rubbed on both sides with most of a mixture of fresh herbs (lovage and winter savory from Keith&#8217;s Farm, and parsley from Jersey Farm Produce Inc.\u00a0in the Saturday 23rd Street farmers market), all chopped together, using a chef\u2019s knife, along with local sea salt, some partially smashed whole black pepper, 2 small cloves of &#8216;Chesnok Red&#8217; garlic from Alewife Farm, a bit of zest from an organic Whole Foods Market California lemon, adding a bit of olive oil added to moisten the mix, reserving a little of the herb mixture for basting, the steaks then pan-grilled, basting throughout the cooking process with some of the reserved mixture, then and removed, ideally, while barely fully cooked in the center, arranged on the plates, finished with a squeeze of lemon and a drizzle of olive oil, garnished with some wonderful micro lemon balm from Two Guys from Woodbridge<\/li>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24142\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/heirloom_Norwich.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24143\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/tomato_Eckerton.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/li>\n<li>three ripe heirloom tomatoes, a red from Eckerton Hill Farm, a green and an orange from\u00a0Norwich Meadows Farm each halved horizontally,\u00a0the cut sides sprinkled sea salt, black pepper, chopped a bit of fresh marjoram from Stokes Farm,\u00a0placed on a hot enameled grill pan, cut side up for 3 or 4 minutes, turned over and grilled for another minute, or minute and a half, arranged on the plates and sprinkled with a little more of the herb, and maybe a drizzle of olive oil<\/li>\n<li>eight small dark green Kirby cucumbers from <a href=\"https:\/\/www.luckydogorganic.com\/farm\">Lucky Dog Organic Farm<\/a>, sliced into bite-size cross sections, saut\u00e9ed\u00a0along with 2 sliced red tropea onions from Alewife Farm in a little olive oil inside a large antique copper pot until both were slightly browned, seasoned with sea salt and black pepper, sprinkled with clipped buds and blossoms of\u00a0 bronze fennel from Rise &amp; Root Farm in the Union Square Greenmarket [I forgot to snap a picture while the cucumbers were still at the farm stand]<\/li>\n<li>the wine was a California (Napa\/Santa Lucia Highlands) ros\u00e9,\u00a0<a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/us.nakedwines.com\/products\/derek-rohlffs-santa-lucia-highlands-rose-2018\">Derek Rohlffs Santa Lucia Highlands Rose 2018<\/a><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">, from\u00a0<\/span><a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/us.nakedwines.com\/full_site#\/\">Naked Wines<\/a><\/li>\n<li>the music was <a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=175522\">an album of\u00a0C.P.E.
