Seafood in the Union Square Greenmarket, made by Dolores Karlin, the wife of Phil Karlin, the fisherman himself, arranged on a thin bed of arugula from Norwich Meadows Farm, the seasoning of the salad adjusted only slightly, including a drizzle of juice from an organic California lemon from Chelsea Whole Foods Market, arranged on leaves of\u00a0 a head of Roxy purple leaf lettuce from Lucky Dog Organic Farm, dressed with a good olive oil, sea salt, freshly ground black pepper, and a drizzle lemon juice too, arranged as a bed for the salad<\/li>\n<li>slices of an\u00a0organic multigrain baguette from Bread Alone<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24088\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/linguine3.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>The main, or pasta course, included a scion of the ur-tomato, called the &#8216;wild Mexican tomato&#8217;, here grown on Eckerton Hill Farm,\u00a0boasting the sophisticated flavors expected of a member of an ancient lineage.<\/p>\n<ul>\n<li>a very simple pasta sauce begun by heating and softening in a little olive oil inside a large antique copper pot over a medium flame, one and a half garlic scapes, cut into very short lengths,\u00a0from Phillips Farms, adding some crushed\u00a0<a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Espelette_pepper\"><span class=\"s2\"><b>dried espelette pepper<\/b><\/span><\/a><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">\u00a0from Alewife Farm, the mix\u00a0<\/span>tossed with 9 ounces of an Afeltra <em>pasta\u00a0artigianale di Gragnano I.G.P.<\/em> 100% <em>grano Italiano biologico<\/em>\u00a0<span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">that had been cooked <em>al dente<\/em> and drained, almost an entire cup of its cooking water also added, everything stirred over a high flame until the liquid had emulsified,<\/span>\u00a0then 4 ounces of fantastic, sweet tiny \u2018wild\u2019 Mexican tomatoes from Eckerton Hill Farm were stirred in, followed by a mix of chopped lovage from Keith&#8217;s Farm, chopped parsley from Jersey Farm Produce Inc.\u00a0in the Saturday 23rd Street farmers market, and torn peppermint leaves from\u00a0Alex&#8217;s Tomato Farm, also in the Saturday market, and finished with more herbs and a little olive oil drizzled around the edges<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine throughout was a Portuguese (Douro) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/quevedo-family-alvarinho-2018?cid=US\">Quevedo Family Alvarinho 2018,<\/a> from <a href=\"https:\/\/us.nakedwines.com\/full_site#\/\">Naked Wines<\/a><\/li>\n<li>the music throughout was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=207620\">Pier Francesoc\u00a0Cavalli&#8217;s 1640 opera, &#8216;Gli Amori D&#8217;apollo E Di Dafne&#8217;<\/a>,\u00a0Gabriel Garrido conducting the\u00a0Elyma Ensemble<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Both were definitely local, but If the &#8216;wild tomatoes&#8217;
