Also surprisingly luscious.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-23998\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/skate_in_bucket.jpg\" alt=\"\" width=\"500\" height=\"500\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24004\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/Brazil_wax_pepper.jpg\" alt=\"\" width=\"500\" height=\"500\" \/><\/p>\n<ul>\n<li class=\"p1\">four 3 1\/2-ounce trimmed skate wings from P.E. &amp; D.D. Seafood in the Union Square Greenmarket that day, coated all over with a local coarse polenta (\u2018Stone-Ground Polenta\u2019 from Wild Hive Farm Community Grain Project), seasoned with <a href=\"https:\/\/twitter.com\/wagnerblog\/status\/1130585718198345728\">local P.E. &amp; D.D. sea salt<\/a> and freshly ground black pepper, saut\u00e9ed in a bit of Whole Foods Market Portuguese house olive oil and a bit of local butter,\u00a0<a href=\"https:\/\/www.vermontcreamery.com\/products\/cultured-butter-86-butter-fat\/\">Vermont Creamery<\/a>, for just under 3 minutes on each side inside a heavy enameled cast iron oven pan (they just barely fit), removed to the plates and kept warm while 1 to 2 tablespoons of more butter and one sliced red spring onion from Norwich Meadows Farm, 2 finely chopped tiny Brazil wax peppers from Eckerton Hill Farm, and a bit of chopped epazote from TransGenerational Farm\u00a0 were introduced into the pan and stirred over a now-lowered flame, just enough to allow the onion to sweat a bit, the heat turned off altogether and another tablespoon of butter added to the pan along with the juice from a little more than half of small organic California lemon from Chelsea Whole Foods (Sespe Creek Organics), the pan stirred for a bit to blend everything and make a proper sauce, which was poured over the skate wings and more epazote sprinkled on top<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24000\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/tomato_orange_heirloom.jpg\" alt=\"\" width=\"500\" height=\"500\" \/><\/p>\n<ul>\n<li>one sliced orange\/yellow heirloom tomato\u00a0from Campo Rosso Farm, seasoned with salt and pepper, saut\u00e9ed briefly in a little olive oil inside a small copper skillet, arranged on the plates with a little chopped fresh <em>za&#8217;atar<\/em> [<em>origanum syriacum<\/em>] from TransGenerational Farm<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-24001\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/radishes_French_breakfast.jpg\" alt=\"\" width=\"500\" height=\"500\" \/><\/p>\n<ul>\n<li>the roots of one bunch of &#8216;French Breakfast&#8217; radishes from Willow Wisp Farm, the greens having been removed and stored with them when they were first brought home, washed\/scrubbed but not trimmed otherwise, split lengthwise into halves or quarters, saut\u00e9ed\u00a0rinsed in several changes of water and set aside, the radishes themselves washed, scrubbed, and cut into wedges, saut\u00e9ed in a little olive oil inside a large, antique, high sided copper pot for a few minutes, one sliced Italian red tropea onion from Alewife Farm added near the end of the cooking, along with a pinch of\u00a0<em>peperoncino Calabresi secchia<\/em>\u00a0from Buon Italia,\u00a0after which the reserved radish leaves, having been washed thoroughly in several changes of water, were introduced into the pan, stirred,\u00a0and allowed to barely wilt, the mix sprinkled with salt and pepper, a tablespoon of white wine poured in and stirred with the radish until the liquid had evaporated<\/li>\n<li>the wine was an Oregon (Willamette Valley\/Dundee Hills) white,\u00a0<a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/www.erath.com\/wines\/release\/2884\">Oregon Pinot Blanc 2016<\/a><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">,\u00a0ordered directly from\u00a0<\/span><a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/www.erath.com\/\">Erath<\/a><\/li>\n<li>the music was <a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/www.prestomusic.com\/classical\/products\/8069215--documents-pour-servir-de-canevas-birdstone\">a fantastic album<\/a><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\"> of works by the remarkable Dutch composer <\/span><a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/en.wikipedia.org\/wiki\/Ivo_van_Emmerik\">Ivo\u00a0Emmerik<\/a><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\"> (b.1961) that includes his, &#8216;Documents Pour Servir De Canevas&#8217;
