{"id":23944,"date":"2019-09-05T00:10:31","date_gmt":"2019-09-05T00:10:31","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=23944"},"modified":"2019-09-05T00:10:31","modified_gmt":"2019-09-05T00:10:31","slug":"nduja-toasts-zaatar-pasta-grape-tomatoes-mint-lovage","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=23944","title":{"rendered":"&#8216;nduja toasts, za&#8217;atar; pasta, grape tomatoes, mint, lovage"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-23947\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/nduja.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I don&#8217;t know how to characterize this meal, but it was delicious.<\/p>\n<ul>\n<li>a few ounces of <em>&#8216;<a href=\"https:\/\/en.wikipedia.org\/wiki\/%27Nduja\">nduja<\/a><\/em>, a classic Calabrian spreadable salumi (&#8220;loosely based on the French andouille introduced in the 13th century by the Angevins&#8221; &#8211; Wikipedia) now made locally by Rico and Jill of Walnut Hill Farm in Pawlet, Vermont, and available in the Union Square Greenmarket, spread on slices of &#8216;Whole wheat Redeemer Bread&#8217; (simply wheat, water, salt) from Lost Bread Co. that had first been toasted with my <a href=\"http:\/\/www.camp-a-toaster.com\/\">\u2018<\/a><a href=\"http:\/\/www.suremarineservice.com\/03-0349.html?gclid=EAIaIQobChMI3LS0gcDg2gIVlIzICh2b5A9IEAkYAiABEgLxL_D_BwE\">Camp-A-Toaster<\/a>\u2018\u00a0on top of our 1930&#8217;s Magic Chef range, the salumi sprinkled with chopped fresh\u00a0<em>za&#8217;atar<\/em> [origanum syriacum] from TransGenerational Farm and drizzled with olive oil<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-23948\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/09\/spaghetti_golden_tomatoes.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>The main course was only a little more elaborate, although totally improvised from what I had on hand. It was basically a long pasta with golden grape tomatoes and several fresh or dry seasoning ingredients.<\/p>\n<ul>\n<li>a few chopped garlic scapes from Phillips Farms saut\u00e9ed in a little olive oil over moderate heat inside a large antique copper pot until they had softened, then adding a quarter to a half teaspoon of some really great dried\u00a0<a href=\"https:\/\/segretidisicilia.it\/prodotti\/semi-di-finocchietto-selvatico\/\">Semi di Finocchietto Ibleo<\/a>\u00a0(wild Sicilian fennel seed harvested in the Iblei Mountains), from Eataly Flatiron, then part of a habanada pepper from Campo Rosso Farm, sliced thinly, and a small stem of celery\u00a0from Norwich Meadow Farm, finely chopped, and stirring a bit more before adding eight ounces of al dente-cooked and drained Afeltra spaghettoni, from Eataly Flatiron and almost a cup of cooking water, the mix stirred over medium to high heat until the liquid had emulsified, and more than a handful of lengthwise-halved golden grape or pear-shaped tomatoes from Alex\u2019s Tomato Farm, that had been sourced at the Saturday 23rd St Greenmarket, added and stirred into the pasta, the mix seasoned with a little freshly-ground black pepper, and some torn peppermint <span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">peppermint from Alex&#8217;s Tomato Farm\u00a0in the Saturday 23rd Street farmers market and chopped lovage from Keith&#8217;s Farm in the Union Square Greenmarket,\u00a0<\/span>arranged in 2 shallow bowls, more mint and lovage added on top, as well as some chopped celery leaves and sliced garlic flower buds, and\u00a0drizzled around the edges with a little olive oil<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine throughout the meal was a Spanish (Bierzo) white,\u00a0<a href=\"https:\/\/www.astorwines.com\/SearchResultsSingle.aspx?p=1&amp;search=20591&amp;searchtype=Contains\">Bierzo Godello, Abad Dom Bueno 2017<\/a>, from <a href=\"https:\/\/www.astorwines.com\/Default.aspx\">Astor Wines<\/a><\/li>\n<li>the music throughout (it was the American Labor day) was <a href=\"https:\/\/www.prestomusic.com\/classical\/products\/8060184--roy-harris-symphony-no-1-concerto-for-violin-and-orchestra\">Roy Harris,\u00a0Symphony No. 1 &#8216;1933&#8217; and his Concerto for Violin and Orchestra&#8217;<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I don&#8217;t know how to characterize this meal, but it was delicious. a few ounces of &#8216;nduja, a classic Calabrian spreadable salumi (&#8220;loosely based on the French andouille introduced in the 13th century by the Angevins&#8221; &#8211; Wikipedia) now made locally by Rico and Jill of Walnut Hill Farm in Pawlet, Vermont, and available in &hellip;<\/p>\n","protected":false},"author":2,"featured_media":0,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[2],"tags":[],"class_list":["post-23944","post","type-post","status-publish","format-standard","hentry","category-meals-at-home"],"_links":{"self":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/posts\/23944","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/users\/2"}],"replies":[{"embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Fcomments&post=23944"}],"version-history":[{"count":0,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/posts\/23944\/revisions"}],"wp:attachment":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Fmedia&parent=23944"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Fcategories&post=23944"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Ftags&post=23944"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
