{"id":23584,"date":"2019-08-12T00:13:43","date_gmt":"2019-08-12T00:13:43","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=23584"},"modified":"2019-08-12T00:13:43","modified_gmt":"2019-08-12T00:13:43","slug":"substitutions-can-add-spice-to-a-dish-mint-insalata-caprese","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=23584","title":{"rendered":"substitutions can add spice to a dish: mint insalata caprese"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-23600\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/08\/caprese_mint.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>Last night I was set on serving the water buffalo mozzarella we had as an appetizer, especially since I had several possibilities for a tomato role, but I had forgotten I didn&#8217;t have basil of any kind.<\/p>\n<p>I was sure neither the mozzarella nor the tomato would object to my fiddling with the classic <a href=\"https:\/\/en.wikipedia.org\/wiki\/Caprese_salad\"><em>insalata caprese<\/em><\/a> formula, and there are probably an unlimited number of alternatives to the classic <em>ocimum basilicum\u00a0<\/em>part, but I went with the closest thing I had to the Italian original: fresh mint leaves, mostly because basil and mint are both in the aromatic\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Lamiaceae\"><em>lamiaceae<\/em> <\/a>family. The mint can get overpowering, but if it does, it can then just be set aside.<\/p>\n<p>It really worked, and I was very happy that the plate looked as good as it tasted.<\/p>\n<p>Except for the olive oil and the wine, it was all about the <a href=\"https:\/\/www.grownyc.org\/greenmarket\/manhattan-union-square-m\">Union Square Greenmarket<\/a>.<\/p>\n<ul>\n<li>the water buffalo mozzarella was from <a href=\"http:\/\/riverineranch.com\/index.html\">Riverine Ranch<\/a>, the single large heirloom tomato was from <a href=\"http:\/\/www.norwichmeadowsfarm.com\/\">Norwich Meadows Farm<\/a>, the spearmint was from\u00a0<a href=\"https:\/\/stokesfarm.com\/\">Stokes Farm<\/a>, the olive oil was\u00a0<a href=\"https:\/\/www.lacourtisanegourmet.com\/products\/divina-renieris-estate-extra-virgin-olive-oil-from-crete\">Renieris Estate &#8216;Divina&#8217;<\/a>\u00a0(Koroneiki varietal), Hania, Crete, from Chelsea Whole Foods Market<\/li>\n<li>slices of\u00a0&#8216;table bread&#8217; from <a href=\"https:\/\/www.lostbreadco.com\/\">Lost Bread Company<\/a><\/li>\n<li>the wine was a Portuguese (Alentejano\/Alentejo) white,\u00a0<a href=\"https:\/\/www.garnetwine.com\/sku03116.html#anchor_moreinfo\">Herdade Do Esporao Verdelho V 2017<\/a>, from <a href=\"https:\/\/www.esporao.com\/\">the Espor\u00e3o Estate<\/a>, 100% Verdelho, from <a href=\"https:\/\/www.garnetwine.com\/\">Garnet Wines<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Last night I was set on serving the water buffalo mozzarella we had as an appetizer, especially since I had several possibilities for a tomato role, but I had forgotten I didn&#8217;t have basil of any kind.
