potatoes; mustard"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-23220\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/06\/Friday_shark_dinner.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>When I&#8217;m shopping at any of the fish stalls at the Union Square GreenmarketI&#8217;ll I usually zero in on whatever I consider the most unusual catch of the day, so of course I brought home some of the shark steak on display on Friday afternoon.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-23212\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/06\/shark_in_bucket.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li class=\"p3\">two thick 9 or 10-ounce <a href=\"https:\/\/en.wikipedia.org\/wiki\/Thresher_shark\">thresher shark<\/a>\u00a0[<em>alopias vulpinus<\/em>] steaks from Pura Vida Seafood, halved, rubbed on both sides with <em>most<\/em> of a mixture of fresh herbs (parsley from from Phillips Farms, tarragon from Lani&#8217;s Farm, and spearmint from Keith&#8217;s Farm), chopped together, using a chef&#8217;s knife, with sea salt, some partially smashed whole black pepper, some fresh spring garlic from from Michisk&#8217;s Farm in Flemington, NJ, a bit of zest from an organic Whole Foods Market lemon, a bit of olive oil added to moisten the mix, reserving a little of the herb mixture for basting, the shark pan-grilled, basted throughout the cooking process with some of the reserved mixture and removed, ideally, while barely fully cooked in the center (exactly as I managed it this time), arranged on the plates, finished with a squeeze of lemon and a drizzle of olive oil, garnished with chopped bronze fennel from<span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\"> from Space on Ryder Farm (of Betsy Ryder&#8217;s family farm)<\/span><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-23214\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/06\/small_red_fingers.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>fourteen small &#8216;red fingerling&#8217; potatoes from Tamarack Hollow Farm, scrubbed, boiled unpeeled in some\u00a0 generously-salted water until barely cooked through, drained, halved, dried in the\u00a0still-warm medium vintage Corning\u00a0<a href=\"http:\/\/www.ndga.net\/articles\/gmflameware.php\">Pyrex Flameware<\/a>\u00a0blue-glass\u00a0<a href=\"http:\/\/www.ebay.com\/itm\/VIntage-Pyrex-6-Piece-Blue-Tint-Flameware-Stovetop-Pans-Removeable-Handles-\/111577304599\">pot<\/a>\u00a0in which they had cooked, tossed with olive oil, seasoned with salt and pepper, tossed with chopped fresh oregano\u00a0from Phillips Farms<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-23210\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/06\/mustards2.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>one large bunch of impressively <em>big<\/em>, &#8216;Big Red&#8217;
