{"id":23162,"date":"2019-06-22T01:12:57","date_gmt":"2019-06-22T01:12:57","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=23162"},"modified":"2019-06-22T01:12:57","modified_gmt":"2019-06-22T01:12:57","slug":"fresh-wild-salmon-butter-dill-onion-florets-cucumber-kale","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=23162","title":{"rendered":"fresh wild salmon, butter, dill, onion florets; cucumber, kale"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-23163\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/06\/salmon_on_counter.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>It&#8217;s beautiful, and the recipe I used this time let me keep the skin on, but then the steak had to end up on the plates skin side down, so there was that.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-23197\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/06\/salmon_cucumbers_kale.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>one beautiful section of salmon fillet, a piece of a wild, almost rainbow trout-like flanked, bright red fleshed, 16-ounce Copper River sockeye, fresh, never frozen, <a href=\"https:\/\/www.msc.org\/\">MSC (Marine Stewardship Council)<\/a> certified (<a href=\"https:\/\/en.wikipedia.org\/wiki\/Marine_Stewardship_Council\">the story is\u00a0 complicated<\/a>), a delight from Chelsea Whole Foods Market, placed unseasoned, skin side up, inside a heavy enameled cast iron pan in which a little more than 2 tablespoons of a rich butter (<a href=\"https:\/\/www.organicvalley.coop\/products\/butter\/pasture-butter\/\">Organic Valley \u2018Cultured Pasture Butter\u2019<\/a>, now almost the only one I ever use) had been allowed to heat until the foam began to recede, the fish then placed inside a 425\u00ba oven until barely cooked, or about 8 minutes, flipped over after 5, removed, arranged on the plates, sprinkled with some\u00a0<a href=\"https:\/\/twitter.com\/wagnerblog\/status\/1130585718198345728\">local Long Island sea salt (P.E. &amp; D.D.
