{"id":22705,"date":"2019-05-26T00:06:13","date_gmt":"2019-05-26T00:06:13","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=22705"},"modified":"2019-05-26T00:06:13","modified_gmt":"2019-05-26T00:06:13","slug":"spaghetti-oil-spring-garlic-peperoncino-garlic-mustard","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=22705","title":{"rendered":"spaghetti, oil, spring garlic, peperoncino, garlic mustard"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22710\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/05\/spaghetti_garlics_chili.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>We had been to the theater, a stunning performance of\u00a0<a href=\"https:\/\/www.signaturetheatre.org\/shows-and-events\/Productions\/2018-2019\/Curse-of-the-Starving-Class.aspx\">Sam Shepard&#8217;s &#8216;Curse of the Starving Class&#8217;<\/a>, and, both stimulated and disturbed, we&#8217;d decided to head for the comfort of our home table rather than eat out (food, and eating both feature large in the play).<\/p>\n<p>We didn&#8217;t arrive home until about 10:30. Dinner would have to be assembled quickly, but I wanted it to be very satisfying, so it was &#8216;<em>two<\/em> bachelors pasta&#8217; to the rescue (my appellation, my improvisation, with a nod to any number of variations on \u2018<a href=\"https:\/\/italoamericano.org\/story\/2015-3-20\/Spaghettata\"><em>spaghettata di mezzanotte<\/em><\/a>\u2018).<\/p>\n<p>I put water in the pot and set it above a high flame as soon as we got into the apartment; the rest of the cooking operation was almost as easy.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22724\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/05\/spring_garlic_morels-1.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22715\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/05\/garlic_mustard_Norwich.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>eight or nine ounces of a one kilogram package of <a href=\"https:\/\/buonitalia.com\/product\/spaghetti-2-2-lbs\/?v=7516fd43adaa\">Setaro Neapolitan spaghetti from Buon Italia<\/a> in the Chelsea Market, cooked al dente, drained, some of the water reserved, mixed into one of the simplest sauces possible: 3\u00a0thinly sliced green, or spring garlic bulbs, the white sections only, from John D. Madura Farms and a bit of crushed dried <a href=\"https:\/\/buonitalia.com\/product\/calabrian-dried-hot-long-chili-peppers-0-70-oz\/?v=7516fd43adaa\"><em>Calabresi peperoncino secchia<\/em>, also from Buon Italia<\/a>, heated together inside a large antique copper pot until the garlic had softened, (basically, seconds), seasoned with sea salt, almost a full cup of the reserved pasta water added and the mix stirred over high heat for a couple of minutes, or until the liquid had emulsified, some <a href=\"https:\/\/en.wikipedia.org\/wiki\/Alliaria_petiolata\">garlic mustard\u00a0<\/a>(not garlic, but it is a mustard) flowers and leaves, from <a href=\"http:\/\/www.norwichmeadowsfarm.com\/\">Norwich Meadows Farm<\/a>, stirred in, more of the herb later tossed on top of the pasta, which was served with olive oil drizzled around the edges<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22730\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/05\/Falanghina_bottle.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>the wine was and Italian (Campania) white,\u00a0<a href=\"https:\/\/www.garnetwine.com\/sku04103.html\">Feudi di San Gregorio Falanghina 2017<\/a>, from <a href=\"https:\/\/www.garnetwine.com\/\">Garnet Wines<\/a><\/li>\n<li>the music was another album by the ensemble, <a href=\"http:\/\/www.ilgiardinoarmonico.com\/\">Il Giardino Armonico<\/a>, &#8216;<a href=\"https:\/\/www.amazon.com\/gp\/product\/B01KBIESUI\/ref=as_li_tl?ie=UTF8&amp;tag=food-blog-20&amp;camp=1789&amp;creative=9325&amp;linkCode=as2&amp;creativeASIN=B01KBIESUI&amp;linkId=026b23df46aee8770117cae92ffb581d\">Viaggio Musicale \/ Italian Music of the Seventeenth Century<\/a>&#8216;, which was at least as gorgeous as the other two we&#8217;ve heard this week<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>We had been to the theater, a stunning performance of\u00a0Sam Shepard&#8217;s &#8216;Curse of the Starving Class&#8217;, and, both stimulated and disturbed, we&#8217;d decided to head for the comfort of our home table rather than eat out (food, and eating both feature large in the play).
