{"id":22536,"date":"2019-05-13T00:49:03","date_gmt":"2019-05-13T00:49:03","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=22536"},"modified":"2019-05-13T00:49:03","modified_gmt":"2019-05-13T00:49:03","slug":"bacon-eggs-garlic-mustard-chicory-ramps-great-toast","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=22536","title":{"rendered":"bacon, eggs, garlic mustard, chicory, ramps, great toast"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22548\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/05\/eggs_bacon_garlic_mustard.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>There were no tomatoes this time, and there was a minimum number of little herb or spice condiments, but &#8211; wonderful to relate &#8211; it was still really enjoyable, in the assembling and in the eating.<\/p>\n<p>The very special tender spring garlic mustard was the guest performer, but the great eggs, bacon, and one small head of chicory were stars as well.<\/p>\n<ul>\n<li>the entire cast: some very fresh eggs from pastured chickens and bacon from pastured pigs, both from Millport Dairy Farm, the eggs seasoned with Maldon salt, and not just pepper, but a mix of black pepper and other things that had gotten together accidentally when I was preparing a dry marinade for <a href=\"http:\/\/food.hoggardwagner.org\/2019\/05\/01\/pork-rillettes-7-hour-pork-belly-salt-potatoes-tomato-salad\/\">a meal a while back<\/a> and then decided to hold onto for an occasion like this (black pepper, fennel seeds cumin seeds, coriander seeds, star anise, white peppercorns, and whole clove), finished with a pinch of dried fenugreek from\u00a0<a href=\"http:\/\/bombayemeraldchutneyco.com\/\">Bombay Emerald Chutney Company\u00a0<\/a>(purchased at the Saturday Chelsea Farmers Market last fall); one small roughly chopped chicory rosette from Campo Rosso Farm saut\u00e9ed in olive oil <em>with<\/em> 3 ramp bulbs (and served\u00a0<em>under<\/em> their leaves), from Mountain Sweet Berry Farm, finished with a drizzle of Columela Rioja 30 Year Reserva sherry vinegar; some wonderful garlic mustard from\u00a0Alewife Farm; <a href=\"https:\/\/aintfoundagoodtitleblog.com\/2011\/08\/13\/trader-joes-sicilian-extra-virgin-olive-oil-food-review\/\">Sicilian <em>Selezione<\/em><\/a> olive oil from Trader Joe&#8217;s; Organic Valley \u2018Cultured Pasture Butter\u2019; lightly toasted slices of 2 terrific Lost Bread Co. loaves,\u00a0&#8216;table bread&#8217; and &#8216;Pane di Tavalo&#8217; (a creation modeled on\u00a0a famous bread from the town of Genzano, near Rome)<\/li>\n<li>our Sunday music was a recording of <a href=\"https:\/\/www.amazon.com\/Dittersdorf-Giob-Das-Kleine-Konzert\/dp\/B07P2FYBWL\">Carl Ditters von Dittersdorf&#8217;s 1776 biblical oratorio, &#8216;Giobbe&#8217;, in a performance by the Rhenische Kantorei\/Das Kliene Konzert conducted by Hermann Max<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>There were no tomatoes this time, and there was a minimum number of little herb or spice condiments, but &#8211; wonderful to relate &#8211; it was still really enjoyable, in the assembling and in the eating.
