{"id":22403,"date":"2019-05-03T05:31:29","date_gmt":"2019-05-03T05:31:29","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=22403"},"modified":"2019-05-03T05:31:29","modified_gmt":"2019-05-03T05:31:29","slug":"speck-wild-dandelion-ravioli-ai-piselli-shallot-mushrooms","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=22403","title":{"rendered":"speck, wild dandelion; ravioli ai piselli, shallot, mushrooms"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22415\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/05\/speck_dandelion.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>With Tuesday&#8217;s dinner I was able to ratchet down the old German kitchen thing that had defined the meal the night before.<\/p>\n<p>Pork, and in fact it was again\u00a0<em>smoked<\/em> pork, was the major player in the first course, but this time, while I suppose it was German-ish, or actually, Austrian-ish (read Tirolean), it was an austere, thinly sliced <a href=\"https:\/\/en.wikipedia.org\/wiki\/Speck_Alto_Adige_PGI\">Speck<\/a>, and not some rich <a href=\"https:\/\/en.wikipedia.org\/wiki\/Rillettes\">rillettes<\/a>.<\/p>\n<p>It&#8217;s interesting that the wines we enjoyed for both courses were from the same bottles we enjoyed the night before, with a new one opened near the end of the pasta.<\/p>\n<ul>\n<li>two ounces of La Quercia\u2019s Ridgetop Speck (applewood smoked prosciutto from pastured pigs)<\/li>\n<li>wild dandelion fro Lani&#8217;s Farm, dressed with a little olive oil (Badia a Coltibuono, from Gaiole in Chianti, Siena, Italy), sea salt, freshly-ground black pepper, and juice from an organic Chelsea Whole Foods Market lemon<\/li>\n<li>slices of what really is a great classic Italian (Tuscan?) bread,\u00a0&#8216;rustic classic&#8217;, or &#8216;rustico&#8217;, from Flatiron Eataly&#8217;s bakery<\/li>\n<li>the wine with the first course was an amazing, brilliant riesling, an Australian (Victoria\/Great Western) white,\u00a0<a href=\"https:\/\/www.astorwines.com\/SearchResultsSingle.aspx?p=1&amp;search=35815&amp;searchtype=Contains\">Best\u2019s \u2018Great Western\u2019 Riesling 2017<\/a>, made by\u00a0<a href=\"https:\/\/www.bestswines.com\/\">Best\u2019s Wines<\/a>, from\u00a0<a href=\"https:\/\/www.astorwines.com\/Default.aspx\">Astor Wines<\/a><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22419\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/05\/piseli_pasta-1.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>There was no pork in the main course this time. In fact there was no meat at all; instead there were some mushrooms, almost always a good alternative for enjoying an entr\u00e9e&#8217;s vegetables and wine. There were no complaints.<\/p>\n<p>It was going to be a light spring pasta until I remembered the paper bag with a few ounces of mushrooms sitting in the refrigerator. They had\u00a0 been there for a few days, and had begun to desiccate on their outer surfaces, making them, as far as I was concerned, even more interesting than they&#8217;d normally be.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22423\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/05\/shiitake-bag.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>twelve ounces of <em>ravioli ai piselli<\/em> (a filling of peas, mint, ricotta, pecorino romano from\u00a0<a href=\"http:\/\/www.pastaioluca.com\/\">Luca Donofrio<\/a>\u2018s fresh pasta\u00a0shop inside\u00a0<a href=\"https:\/\/www.eataly.com\/us_en\/stores\/nyc-flatiron\/\">Eataly\u2019s Flatiron store<\/a>,\u00a0boiled carefully for only a couple of minutes, or until barely cooked through in a large amount of well-salted water, drained, some of the pasta water retained, the pasta slipped into a large antique high-sided tin-lined copper pot in which a simple sauce had been created, beginning with a tablespoon of melted\u00a0<a href=\"https:\/\/www.organicvalley.coop\/products\/butter\/pasture-butter\/\">Organic Valley \u2018Cultured Pasture Butter\u2019<\/a> in which one\u00a0&#8216;camelot&#8217; Dutch red shallot from Quarton Farm had been briefly saut\u00e9ed until softened,<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22424\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/05\/mushrooms_pan-1.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>followed by 5 ounces of sliced shiitake mushrooms from the Union Square Greenmarket stand of\u00a0<a href=\"https:\/\/www.violethillfarm.com\/\">Violet Hill Farm<\/a> (where Patrick told me they were the first of the season, at least for their farm) had been tossed in, everything stirred over medium to high heat until the\u00a0 mushrooms had properly cooked, salt, pepper, and spearmint from Stokes Farm added and the pasta\u00a0<span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">arranged\u00a0<\/span><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">inside shallow bowls, micro scallion from Two Guys from Woodbridge arranged as a garnish, finished with\u00a0<\/span>a drizzle of olive oil around the edges<\/li>\n<li>the wine with the main course was a the remainder of the previous day&#8217;s terrific German (<a href=\"https:\/\/en.wikipedia.org\/wiki\/Ahr_(wine_region)\">Ahr<\/a>) red,\u00a0<a href=\"https:\/\/www.gramercywine.com\/wines\/Meyer-Nakel-Ahr-Spatburgunder-Pinot-Noir-2014-w5582510oo\">Meyer-N\u00e4kel Ahr Sp\u00e4tburgunder Pinot Noir 2014<\/a>, from\u00a0<a href=\"https:\/\/www.gramercywine.com\/\">Gramercy Wine<\/a>, and\u00a0when that had disappeared, there was a California (Lodi) red, <a href=\"https:\/\/us.nakedwines.com\/products\/jacqueline-bahue-cabernet-franc-lodi-2017\">Jacqueline Bahue Lodi Cabernet Franc 2017<\/a>, from <a href=\"https:\/\/us.nakedwines.com\/full_site#\/\">Naked Wines<\/a><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the music throughout the meal was the album, <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=2246873\">&#8216;New York&#8217;, music composed by Matthias\u00a0Pintscher, performed by the Ensemble Intercontemporain<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>With Tuesday&#8217;s dinner I was able to ratchet down the old German kitchen thing that had defined the meal the night before.
