asparagus, thyme"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22307\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/04\/tilefish_tomato_asparagus.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>Even though I think I&#8217;m always prepared for the possibility, I&#8217;m still pretty surprised when a meal exceeds my expectations.<\/p>\n<p>This one went out of the park.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22305\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/04\/tilefish_au_gratin.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I&#8217;m taking a good look at this picture of the first outing of my old, recently re-tinned pan, because I&#8217;m pretty sure it&#8217;s not ever going to look this shiny again.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22317\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/04\/pan2.jpg\" alt=\"\" width=\"325\" height=\"433\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22316\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/04\/pan1.jpg\" alt=\"\" width=\"325\" height=\"433\" \/><\/p>\n<p>The tilefish started out pretty shiny as well.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22308\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/04\/tilefish_bucket.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>three tablespoons of rich\u00a0<a href=\"https:\/\/www.organicvalley.coop\/products\/butter\/pasture-butter\/pasture-butter-cultured-1-lb-4-quarters\/\">Organic Valley \u2018Cultured Pasture Butter\u2019\u00a0<\/a>allowed to melt inside a newly-re-tinned vintage oval copper au gratin pan in a 475\u00aa oven until barely browned, then adding the bulbs of 4 ramps from Mountain Sweet Berry Farm sliced crosswise, the leaves sliced lengthwise, and more than 3 tablespoons of chopped herbs (lovage<span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\"> from Two Guys from Woodbridge;\u00a0<\/span>spearmint<span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\"> from Stokes Farm; sage, <\/span>parsley<span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">, and\u00a0<\/span>dill\u00a0<span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">from Phillips Farms<\/span><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">) scattered around the pan,\u00a0<\/span>one beautiful tilefish fillet (17 ounces) from American Seafood Company, rinsed, dried, seasoned with sea salt and freshly-ground black pepper, placed inside the pan skinned side down, roasted, the oven turned down to about 450\u00ba as a compromise with the requirement of the vegetable, turning once, for about 12 minutes, or until done, removed to the plates, sauced with the pan juices<\/li>\n<li>three Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Chelsea Whole Foods, halved, added to the pan with the tilefish during its last few minutes in the oven<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-22309\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/04\/asparagus.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>one pound of asparagus, with spears of various thicknesses, from Phillips Farms, the tough ends snapped off, and much of the length of the few wider stems peeled, rolled inside a large Pampered Chef unglazed ceramic pan with a handful of thyme branches from Stokes Farm in a little more than a tablespoon of olive oil, a little salt, and ground black pepper, roasted at 425\u00ba for about 20 or 25 minutes, then drizzled with a bit of Whole Foods Market organic lemon when they were arranged on the plates<\/li>\n<li>the wine was an Italian (<a href=\"https:\/\/en.wikipedia.org\/wiki\/Trentino-Alto_Adige\/S%C3%BCdtirol\">Trentino-Alto Adige\/Sudtirol<\/a>) white,\u00a0<a href=\"https:\/\/www.garnetwine.com\/sku00547.html\">Alois Lageder Pinot Bianco 2017<\/a>, from <a href=\"https:\/\/www.garnetwine.com\/\">Garnet Wines<\/a><\/li>\n<li>the music was the album, <a href=\"https:\/\/kennethwoods.net\/blog1\/bio\/discography\/ernst-krenek-complete-piano-concertos-vol-2-mikhail-korzhev-and-english-symphony-orchestra\/\">&#8216;Ernst KRENEK: Complete Piano Concertos, Volume TWO&#8217;, with Mikhail Korzhev and the English Symphony Orchestra conducted by Kenneth Woods<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Even though I think I&#8217;m always prepared for the possibility, I&#8217;m still pretty surprised when a meal exceeds my expectations.
