{"id":2223,"date":"2014-09-28T20:41:56","date_gmt":"2014-09-28T20:41:56","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=2223"},"modified":"2014-09-28T20:41:56","modified_gmt":"2014-09-28T20:41:56","slug":"frittata-sweet-hot-peppers-garlic-shallot-oregano","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=2223","title":{"rendered":"frittata: sweet &#038; hot peppers, garlic, shallot, oregano"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/09\/caramelized_sweet_pepper-_frittata.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2224\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/09\/caramelized_sweet_pepper-_frittata.jpg\" alt=\"caramelized_sweet_pepper-_frittata\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>This entr\u00e9e was an improvisation. \u00a0I had the ingredients on hand, I had a lot of confidence in their quality, and I wanted to use them while they were still fresh.<\/p>\n<p>I should explain that the image should have represented a\u00a0proper wedge (one\u00a0quarter of the very juicy frittata), but it managed to attract\u00a0some of the vegetables belonging to it neighbors.<\/p>\n<ul>\n<li>small multi-colored bell peppers from Norwich Meadows Farm, sliced to form large (ish) pieces, saut\u00e9ed \u00a0in a large cast-iron pan until partially caramelized, with one sliced shallot from Phillips Farm,\u00a0some sliced garlic from Berried Treasures, and one small, finely-chopped Thai pepper (also from Norwich Meadows Farm) added near the end, then 10 small pullet eggs from Norwich Meadows Farm,\u00a0seasoned and fork-whipped, poured\u00a0to the pan, everything sprinkled with chopped fresh oregano from Central Valley Farm, the frittata finished under the broiler once the eggs had begun to set halfway to the center<\/li>\n<li>the wine was a Spanish red,\u00a0<a style=\"color: #772124;\" href=\"http:\/\/www.wedefinewine.com\/catalog\/flavium-crianza-2005.htm\">Flavium Crianza Bierzo 2006<\/a>, a Leon, from from\u00a0<a style=\"color: #772124;\" href=\"http:\/\/www.yelp.com\/biz\/philippe-wine-and-liquor-new-york\">Phillipe Wine<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; This entr\u00e9e was an improvisation. \u00a0I had the ingredients on hand, I had a lot of confidence in their quality, and I wanted to use them while they were still fresh.
