{"id":2202,"date":"2014-09-20T05:31:29","date_gmt":"2014-09-20T05:31:29","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=2202"},"modified":"2014-09-20T05:31:29","modified_gmt":"2014-09-20T05:31:29","slug":"hake-on-a-bed-of-potatoes-laurel-olives-greens","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=2202","title":{"rendered":"hake on a bed of potatoes, laurel, olives; greens"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/09\/hake_potatoes_olives_bay1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2207\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/09\/hake_potatoes_olives_bay1.jpg\" alt=\"hake_potatoes_olives_bay\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>I discovered <a href=\"http:\/\/www.nytimes.com\/1999\/05\/19\/dining\/the-minimalist-fish-on-a-bed-of-potatoes.html\">this\u00a0recipe<\/a> years ago through\u00a0Mark Bittman, although, like so much else that works well in the kitchen\u00a0it may actually\u00a0be pretty ancient. \u00a0It&#8217;s a treasure, regardless of its pedigree, and it&#8217;s extremely adaptable. \u00a0I used hake this time, but it can also\u00a0show off cod, monkfish, sea bass and\u00a0a number of other\u00a0choices.<\/p>\n<p>By the way, the amount of oil called for in the\u00a0recipe published in the Times might be reduced somewhat without compromising either\u00a0the texture or taste of the potatoes, but what seems to be an outlandish amount of bay leaf and black olives turns out to be\u00a0just about right.<\/p>\n<ul>\n<li>a little over a\u00a0pound of hake fillet from Pura Vida, cooked\u00a0for ten minutes in a hot oven in a ceramic pan on top of thinly-sliced red-skin &#8216;new potatoes&#8217; which had already been baking for twenty minutes in a generous amount of olive oil\u00a0before they were\u00a0covered with a dozen bay (or laurel) leaves and nearly\u00a0a cup of pitted black olives (half of them Kalamata, the other half Moroccan, because that was all I had)<\/li>\n<li><a href=\"http:\/\/food.hoggardwagner.org\/2014\/09\/19\/meatballs-braised-beet-greens-roasted-fingerlings\/\">the last of<\/a> some beet greens from Race Farm, braised with halved cloves of garlic from Berried Treasures<\/li>\n<li>the wine was a white Sardinian, <a href=\"http:\/\/www.sellaemosca.it\/en\/legal.php?r=\/en\/vini_radici_sarde.php?id_sub=17&amp;id_art=382\">La Cala Vermentino di Sardegna 2013\u00a0<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I discovered this\u00a0recipe years ago through\u00a0Mark Bittman, although, like so much else that works well in the kitchen\u00a0it may actually\u00a0be pretty ancient. \u00a0It&#8217;s a treasure, regardless of its pedigree, and it&#8217;s extremely adaptable. \u00a0I used hake this time, but it can also\u00a0show off cod, monkfish, sea bass and\u00a0a number of other\u00a0choices.
