{"id":2114,"date":"2014-09-09T05:49:30","date_gmt":"2014-09-09T05:49:30","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=2114"},"modified":"2014-09-09T05:49:30","modified_gmt":"2014-09-09T05:49:30","slug":"sauteed-flounder-fennel-and-tomato-radish-greens","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=2114","title":{"rendered":"saut\u00e9ed flounder, fennel and tomato, radish greens"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/09\/flounder_fennel_with_tomato_radish_greens.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2117\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/09\/flounder_fennel_with_tomato_radish_greens.jpg\" alt=\"flounder_fennel_with_tomato_radish_greens\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>This entr\u00e9e was a triumph of fresh local,\u00a0natural food sources. \u00a0Absolutely everything which was not actually fresh (like\u00a0oil, salt, pepper, vinegar, flour) &#8211; other than the lemon juice\u00a0and the wine\u00a0&#8211; was brought home\u00a0from the Union Square Greenmarket in the last few days.<\/p>\n<ul>\n<li>flounder fillets from PE &amp; DD, washed, dried, brushed with a bit of good white wine vinegar and salt, floured, browned in olive oil, then removed to the plates, the pan wiped with paper towels, then butter, lemon juice and parsley from Paffenrath Farms added quickly and briefly heated,\u00a0the resulting sauce poured over the fillets, \u00a0which were finished with chopped lovage from\u00a0Mountain Sweet Berry Farm<\/li>\n<li>bulb fennel from Norwich Meadows Farm, slowly braised with sliced garlic from from Berried treasures, roughly-chopped\u00a0heirloom tomatoes (also from Berried Treasures), crushed hot chiles (dried\u00a0Santaka Peppers from Keith&#8217;s Farm), then finished with lemon juice, and chopped fennel fronds<\/li>\n<li>radish greens from\u00a0John D.
