{"id":21104,"date":"2019-02-13T02:46:36","date_gmt":"2019-02-13T02:46:36","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=21104"},"modified":"2019-02-13T02:46:36","modified_gmt":"2019-02-13T02:46:36","slug":"radish-skate-with-shallot-garlic-sorrel-tomatoes-bok-choy","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=21104","title":{"rendered":"radish; skate with shallot, garlic, sorrel; tomatoes; bok choy"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-21106\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/02\/purple_radish_1.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>The beautiful radish we sampled before sitting down was the most novel part of this meal, but the entr\u00e9e was no less delicious, for all its familiarity.<\/p>\n<ul>\n<li>a section from a\u00a0<a href=\"https:\/\/www.windfallfarms.com\/pictures\/\">&#8216;Purple Triton&#8217; radish<\/a>\u00a0(see the picture on their site) from Windfall Farms, thinly-sliced, or shaved, on the spot, and served with a small bowl of Maldon salt<\/li>\n<li>a few <a href=\"http:\/\/mediterraneancrackers.com\/\">Firehook Mediterranean<\/a> Baked Rosemary Sea Salt Crackers from Chelsea Whole Foods Market<\/li>\n<\/ul>\n<p>We love skate.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-21112\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/02\/skate_undulation.jpg\" alt=\"\" width=\"450\" height=\"949\" \/><\/p>\n<p>The main course was pretty colorful in its own right, more colorful than a plate can be expected to appear in the middle of a New York February.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-21109\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/02\/skate_tomato_bok_choy.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>four small skate wings (12 ounces total) from P.E. &amp; D.D. Seafood, coated all over with a\u00a0<em>local<\/em>\u00a0coarse polenta (<a href=\"https:\/\/wildhivefarm.com\/product\/stone-ground-polenta\/\">\u2018Stone-Ground Polenta\u2019 from Wild Hive Farm Community Grain Project<\/a>) that had been seasoned with sea salt and freshly-ground black pepper, saut\u00e9ed in olive oil and a bit of butter for a couple of minutes or so on each side, inside a heavy enameled cast iron oven pan, then removed to 2 plates and kept warm while a tablespoon and a half of butter was added to the pan, along with one chopped &#8216;yellow shallot&#8217; from Norwich Meadows Farm and 2 cloves of &#8216;music&#8217;\/aka &#8216;strong neck&#8217; garlic from Windfall Farms, the alliums stirred over a now-lowered flame and allowed to only sweat a bit before the heat was\u00a0turned off altogether,\u00a0when another 1 1\/2 tablespoons of butter was added, along with the juice from half of a Whole Foods Market organic lemon and a small handful of baby sorrel from Two Guys from Woodbridge, very briefly stirred to blend together and make a proper sauce to be poured over the skate (the sorrel retained its color and didn&#8217;t turn olive green, because it was really never fully heated)<\/li>\n<li>three Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods Market, halved, their cut sides sprinkled with salt and pepper, pan grilled, turning once, arranged on the plates, sprinkled with thyme leaves from Phillips Farms, and drizzled with a bit of olive oil<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-21114\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2019\/02\/bok_choy_Lanis.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>one bunch of small\u00a0bok choy from Lani&#8217;s Farm, washed and drained, stirred into a large antique large copper pot\u00a0inside of which one halved garlic clove had been heated until just beginning to color, cooked until barely tender, their stem sections even a little crunchy [note: like all greens, they continue to reduce, or wilt, even after they are removed from the heat], seasoned with salt and pepper,\u00a0arranged on the plates, and drizzled with a little more olive oil<\/li>\n<li>the wine was a French (Loire\/Touraine) white,\u00a0<a href=\"https:\/\/www.astorwines.com\/SearchResultsSingle.aspx?p=1&amp;search=38728&amp;searchtype=Contains\">Cheverny Blanc &#8216;Cuv\u00e9e des Ormes,&#8217; Dom.
