Looking for something out of our ordinary for seasoning our usual fried eggs, I pulled down from the shelf a small bottle of\u00a0<em>gram masala<\/em>\u00a0that I&#8217;d purchased last fall\u00a0from\u00a0<a href=\"http:\/\/bombayemeraldchutneyco.com\/\">Bombay Emerald Chutney Company<\/a>\u00a0in the Saturday\u00a0<a href=\"http:\/\/downtoearthmarkets.com\/markets?region=Manhattan&amp;market=Chelsea+Farmers+Market\">Chelsea\u2019s Down to Earth Farmers Market<\/a>.<\/p>\n<p>What is it? The food site <a href=\"https:\/\/www.epicurious.com\/\">epicurious.com<\/a> describes it as <a href=\"https:\/\/www.epicurious.com\/recipes\/food\/views\/garam-masala-240907\">the Indian equivalent of the French <em>herbes de Provence<\/em> or Chinese five-spice powder<\/a>, adding that the ingredients vary by geography or culture, as well as whim. The two words together mean &#8216;hot&#8217; and &#8216;a mixture of spices&#8217;, and while the spelling is usually &#8216;garam&#8217;, in Bengali it seems to be &#8216;gram&#8217;.<\/p>\n<p>When I chose to sprinkle some on the eggs, I knew I wouldn&#8217;t have to include much else, except salt, but, unable to restrain myself, I added some chopped fresh rosemary anyway, to introduce something fresh and green; I figured it was an herb that wouldn&#8217;t fight the spices.<\/p>\n<p>My point is that the eggs were not like any others we&#8217;ve had, and really wonderful, so this post, like all of them, is published fundamentally as a reminder for myself.<\/p>\n<ul>\n<li>the ingredients were very fresh eggs from pastured chickens and bacon from pastured pigs, both from Millport Dairy Farm; one sliced Backyard Farms Maine \u2018cocktail tomato\u2019 from Chelsea Whole Foods Market warmed in a little house Whole Foods Portuguese olive oil; local (regional)\u00a0<a href=\"https:\/\/www.organicvalley.coop\/products\/butter\/pasture-butter\/\">Organic Valley \u2018Cultured Pasture Butter\u2019<\/a> placed to the side, for the toast, also from Whole Foods Market; chopped fresh purple thyme from Philipps Farms, sprinkled on the tomatoa couple pinches of <em>gram masala <\/em>from Bombay Emerald Chutney Company; chopped fresh rosemary leaves from Whole Foods Market; Maldon salt; freshly-ground black pepper; lightly toasted slices of\u00a0<a title=\"Go to Pain D'Avignon\" href=\"https:\/\/www.paindavignon.com\/\">Pain D&#8217;Avignon<\/a>&#8216;s &#8216;country sourdough bread&#8217; from Foragers Market; and\u00a0<span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">micro purple radish from\u00a0Two Guys from Woodbridge<\/span><\/li>\n<li>the music was the ECM album, <a href=\"https:\/\/www.ecmrecords.com\/catalogue\/143038752809\/valentin-silvestrov-sacred-songs-kiev-chamber-choir-mykola-hobdych\">&#8216;Valentin Silvestrov: Sacred Songs&#8217;<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I haven&#8217;t been posting our Sunday breakfasts lately, but this one was something of a revelation, so I decided to include it on the site.
