{"id":20472,"date":"2018-12-30T23:50:47","date_gmt":"2018-12-30T23:50:47","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=20472"},"modified":"2018-12-30T23:50:47","modified_gmt":"2018-12-30T23:50:47","slug":"crab-cakes-on-tomato-salsa-on-wild-cress-brussels-sprouts","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=20472","title":{"rendered":"crab cakes on tomato salsa on wild cress; brussels sprouts"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-20497\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/12\/crab_cakes_Brussels_sprouts.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>Almost a day off.<\/p>\n<p>This was a casual meal slipped in between some more ambitious holiday season dinners, and it was pretty much improvised; the idea was to give the cook a cook&#8217;s holiday, and to include elements or ingredients that had been inside the apartment for a while before they came close to the end of their useful life.<\/p>\n<p>It could also be described as the impecunious diner&#8217;s surf &amp; turf, turf here meaning vegetables.<\/p>\n<ul>\n<li>two crab cakes from\u00a0<a href=\"https:\/\/janniesusan.blogspot.com\/2015\/10\/an-abundant-life-catch-of-day.html\">PE &amp; DD Seafood<\/a>\u00a0(crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, and parsley), from the older of the 2 packages in the freezer at the time, made by Dolores Karlin, the wife of Karl Karlin, the fisherman, defrosted the night before, brought to room temperature and heated up with a drizzle of olive oil inside a small, heavy vintage, well-seasoned cast iron\u00a0pan, 3\u00a0to 4\u00a0minutes to each side,\u00a0served\u00a0on a salsa\u00a0composed of 6 quite ripe Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods that were quartered and combined\u00a0with sea salt, freshly-ground black pepper,\u00a0a small bit of dried\u00a0<em>peperoncino Calabresi secchi<\/em>\u00a0from Buon Italia, chopped Salinas, California parsley from Eataly,\u00a0dried Sicilian\u00a0oregano from Buon Italia, and a few cut-up sections of Berried Treasures Farm garlic scapes\u00a0(the last of the season) that had first been softened by warming them up in a little olive oil over a gentle flame, the salsa in turn had itself been arranged on a shallow bed of\u00a0wild cress from Lani&#8217;s Farm, the whole assembly garnished with some remarkably long-surviving pea shoots purchased from Echo Creek Farm in the Saturday Chelsea Farmers Market very early in December<\/li>\n<li>twelve small Brussels sprouts from\u00a0Lani\u2019s Farm, the last from a quantity that I had also purchased over 3 weeks earlier, washed, trimmed and dried, tossed inside a bowl with a little olive oil, sea salt and freshly ground black pepper, plus more of the\u00a0dried\u00a0<em>peperoncino Calabresi secchi<\/em>\u00a0roasted\u00a0inside a medium size unglazed seasoned Pampered Chef pan until the sprouts were partly brown and crisp on the outside<\/li>\n<li>the wine was an Italian (Veronese) white,\u00a0<a href=\"https:\/\/flatiron-wines.com\/corte-quaiara-garganega-campo-al-salice-2016\">Corte Quaiara, Garganega Campo al Salice 2016<\/a>, from <a href=\"https:\/\/flatiron-wines.com\/\">Flatiron Wines<\/a><\/li>\n<li>the music was again live streaming of the awesome octonary\u00a0<a href=\"https:\/\/www.cc-seas.columbia.edu\/wkcr\/node\/21342\">WKCR Bachfest 2018<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Almost a day off.
