{"id":1953,"date":"2014-08-17T05:35:14","date_gmt":"2014-08-17T05:35:14","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=1953"},"modified":"2014-08-17T05:35:14","modified_gmt":"2014-08-17T05:35:14","slug":"nasello-dorato-yellow-pole-beans-grilled-tomatoes","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=1953","title":{"rendered":"nasello dorato, yellow pole beans, grilled tomatoes"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/08\/hake_yellow_flat_beans_tomato.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1956\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/08\/hake_yellow_flat_beans_tomato.jpg\" alt=\"hake_yellow_flat_beans_tomato\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>I was so taken with the look of the hake fillet at PE &amp; DD in the Greenmarket today that I didn&#8217;t think about what I would do with it when I got home. \u00a0Only when I had gotten there\u00a0did I remember that all of the recipes I have used with hake involved a hot\u00a0oven. \u00a0While the temperature outside was\u00a0as remarkably moderate today, I had no interest in spoiling the coolness of the evening by stoking\u00a0a 400\u00ba stove. \u00a0 \u00a0But hake is very similar to cod, and eventually I remembered a simple and delicious recipe\u00a0which I&#8217;ve\u00a0used with\u00a0cod fillet: \u00a0<em>merluzzo dorato<\/em>. \u00a0 \u00a0I believe the hake version would be called\u00a0<em>nasello dorato <\/em>in Italy<em>, <\/em>but, in any event, I can say for certain that it was a wonderful surprise: \u00a0It was the most delicious hake entr\u00e9e I&#8217;ve ever had.<\/p>\n<ul>\n<li>hake fillets from PE &amp; DD, dredged in seasoned flour and dipped in a\u00a0beaten egg from 3-Corner Field Farm, saut\u00e9ed in butter along with\u00a0a handful of sage leaves from Keith&#8217;s Farm, then sprinkled with lemon juice and the pan juices that remained.<\/li>\n<li>small seasoned pan-grilled San Marzano tomatoes from Mountain Sweet Berry Farm, finished with a dab of olive oil and a bit of balsamic vinegar<\/li>\n<li>flat yellow pole beans from Norwich Meadows Farm, blanched, then reheated later in a bit of olive oil, seasoned and finished with chopped lovage from Keith&#8217;s Farm<\/li>\n<li>the wine was one of our favorite Spanish whites,\u00a0<a style=\"color: #772124;\" href=\"http:\/\/www.bodegasnaia.com\/naia-2010-en\">Naia 2013 D.O.C.
