{"id":1869,"date":"2014-08-05T05:33:09","date_gmt":"2014-08-05T05:33:09","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=1869"},"modified":"2014-08-05T05:33:09","modified_gmt":"2014-08-05T05:33:09","slug":"sauteed-flounder-broad-beans-purple-snow-peas","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=1869","title":{"rendered":"saut\u00e9ed flounder, broad beans, purple snow peas"},"content":{"rendered":"<p><a href=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/08\/flounder_broad_beans_purple_snow_peas.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1872\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2014\/08\/flounder_broad_beans_purple_snow_peas.jpg\" alt=\"flounder_broad_beans_purple_snow_peas\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>This one is almost as simple as it comes, except for the multiple plates demanded by the slightly-messy business of\u00a0flouring the fillets after I had brushed them with vinegar.<\/p>\n<p>The\u00a0flounder fillets from <a href=\"http:\/\/foodcurated.com\/2010\/12\/keeping-afloat-why-supporting-small-local-commercial-fishermen-is-important\/\">PE&amp;DD<\/a>, at the Greenmarket, were sprinkled with a good white wine\u00a0vinegar (here\u00a0<a href=\"http:\/\/www.siitaly.com\/product\/olio-e-aceto\/aceto-cesare-bianco\/\">Aceto\u00a0Cesare Bianco<\/a>) and salt, then lightly-floured, before being saut\u00e9ed in oil. \u00a0When they were cooked through, I\u00a0removed \u00a0them from the pan and placed them on plates. I\u00a0wiped the pan with a paper towel, and and added butter and lemon juice,\u00a0along with\u00a0some fresh chopped parsley, quickly mixing everything\u00a0while scraping the bottom of the pan,\u00a0now over\u00a0a very low flame. \u00a0 I poured the finished sauce over the fish.<\/p>\n<p>The vegetables, also purchased today, from what\u00a0I have to describe as the honestly-saintly\u00a0<a href=\"http:\/\/www.norwichmeadowsfarm.com\/\">Norwich Meadows Farm<\/a>\u00a0of Zaid and Haifa Kurdieh (and their terrific helpers), was a delightful medley of young flat beans, both green and yellow, and tender purple snow peas. I parboiled them together, drained, and dried them, then\u00a0re-heated the legumes\u00a0in oil, seasoning\u00a0them with salt and pepper. \u00a0They were very <em>simply<\/em> delicious, pretty much what I usually work for, and I was really happy\u00a0to see the snow peas retain their color.<\/p>\n<p>The wine was a French white Bordeaux, <a href=\"http:\/\/www.redfeetwine.com\/productdetails.php?p=558#.U-Bp44BdWQk\">Petit Chapeau Bordeau Blanc 2013<\/a><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; This one is almost as simple as it comes, except for the multiple plates demanded by the slightly-messy business of\u00a0flouring the fillets after I had brushed them with vinegar.
